Abstract
"PRODUTO ALIMENTìCIO à BASE DE FARINHA CONTENDO ALFA-AMILASE TERMOESTáVEL". A invenção refere-se a um produto alimentício à base de farinha contendo uma <244>-amilase termoestável e amido modificado in situ, bem como a um processo incluindo as etapas de preparação de uma massa misturando-se pelo menos farinha, água e uma <244>-amilase termorresistente e cozimento da massa em pelo menos uma superfície quente, ao uso de <244>amilase termoestável para manipular os atributos de textura de produtos alimentícios à base de farinha e a um método para modificação de amido em um biscoito wafer sem aumentar a viscosidade da massa. Os produtos alimentícios à base de farinha são biscoitos wafer, biscoitos e biscoitos finos.
