BREVET D'INTENTION " Machine à trancher les viandes Il.
Cette invention est relative aux machines à découper les viandes et autres substances comestibles en tranches successives.
La machine à trancher à laquelle l'invention est appliquée comprend une goulotte (ou organe porte-substances) qui est in- clinée de telle sorte que la substance., est entraînée vers le bas en glissant sur elle par gravité, un porte-couteau pivotant auquel un mouvement de va-et-vient peut être communiqué en re- gard du porte-substance incliné, un couteau rotatif supporté pour tourner dans ce porte-couteau et placé suivant un plan in- cliné, un calibre ou guide réglant l'épaisseur des tranches, ce calibre étant relié au porte-couteau, et une pièce de garde contre laquelle bute la substance et qui pivote avec le porte- couteau, cette pièce étant disposée de façon à masquer le corps du couteau mais à exposer le tranchant à la zone de dé- coupage.
Une machine à trancher suivant l'invention peut aussi comprendre un collecteur de tranohes qui est mobile de façon

qu'il puisse recevoir une pile de tranches de hauteur progressi- vement croissante et (ou) qui est mobile vers la fin de chaque opération de découpage de façon à faciliter la formation d'une pile bien ordonnée. Le premier de ces mouvements aurait lieu périodiquement en s'éloignant du plan de tranchage et pourrait être effectué par les tranches elles-mêmes; et le second aurait lieu dans le sens opposé à la course de tranchage.
On décrira maintenant à titre d'exemple une machine à tran- cher suivant l'invention, en se référant au dessin schématique annexé sur lequel :
Figure 1 est une coupe verticale de la machine.
Figure 2 en est une vue en plan en regardant dans le sens de la flèche II de la figure 1.
Figure 3 montre en coupe verticale des détails de construc- tion, la coupe étant prise approximativement par la ligne III- III de la figure 2.
La machine représentée est munie d'un couteau mis en rota- tion par un moteur et d'un porte-couteau qu'on fait pivoter manuellement. Comme représenté, un moteur électrique 10 est logé dans un bâti formant socle 11, et le couteau 12 est porté par un bras 13 qui est monté pour pivoter par une de ses ex- trémités sur un tourillon 14a faisant partie d'un arbre 14 tourillonnant dans le bâti 11, ce bras 13 étant muni d'une poi- gnée de poussée et de traction 15. Le bras porte-couteau 13 s'incline vers le haut, et l'arbre 16 du couteau est une douille montée pour tourner à l'extrémité supérieure du bras. Une transmission à chaîne et pignons 17 servant à actionner le cou- teau est renfermée à l'intérieur du bras et actionnée par le moteur 10 par l'intermédiaire d'un engrenage réducteur à vis sans fin 18 logé dans le bâti 11.
Le bras 13 porte aussi un calibre réglable ou régulateur d'é- paisseur de tranche 19, dont un des bords est courbe pour épouser la courbure du tranchant circulaire, et une plaque de @

garde 20 contre laquelle bute la substance, cette plaque étant fixée rigidement et masquant le corps du couteau. Un mécanisme permettant de rapprocher et d'éloigner la plaque 19 du plan de tranchage est indiqué en 19a . La disposition est telle que la substance glisse en travers des faces parallèles de la plaque de calibrage 19 et de la plaque de gatde 20 et est soumise à l'action du couteau, dont le bord est exposé entre les plaques.
La substance à trancher est maintenue dans une auge ou goulotte d'entraînement à gravité 21, qui possède approximative- ment la.forme d'un V et est fixée de façon réglable, en 22, à une colonne 23 portée par le bâti, cette goulotte étant dispo- sée perpendiculairement, ou presque, au plan de tranchage du couteau.
Le poids du bras porte-couteau pivotant et des pièces y reliées est supporté par un rail'ou chemin arqué fixe 24 prévu sur le bâti et sur lequel roulent des galets 25 portés par le bras.
Les tranches sont reçues par un collecteur 26 composé d'un plateau ou plaque à rebord prévu sur le bâti, au-dessous de la zone de tranchage.
Le collecteur de tranches 26 est porté par des bras 27 montés pour pivoter sur un support 28 et supportés par un res- sort 29 enroulé autour d'une tige de guidage arquée 30. La disposition est telle que le poids des tranches reposant sur le collecteur 26 tend à pousser ce collecteur et à contracter le ressort de support ; et il arrive par conséquent un moment où, dans l'opération de la machine, chaque tranche déposée fait descendre le collecteur d'une courte distance, en créant ainsi la place nécessaire pour d'autres tranches.
Le support mobile 28 du collecteur de tranches est monté pour coulisser sur deux tiges'de guidage horizontales 31, 32 qui sont fixées à des con- soles 33, 34 du bâti, un ressort 35 enroulé autour de la tige 31 sollicitant constamment le support 28 dans le sens de @

la course de tranchage du couteau, vers un tampon amortisseur 36 qui constitue une butée limite. Un levier 37 supporté en un point intermédiaire 37a de sa longueur par la carcasse du moteur est relié par un assemblage à goujon et fente 38 prévu à son extrémité inférieure au support 28, et son extrémité su- périeure est munie d'une plaque 39 qui coopère avec un butoir constitué par un galet 40 solidaire du bras porte-couteau.
En fonctionnement, le galet 40 bute contre le levier 37 vers la fin de chaque course de tranchage et oblige ainsi le support 28 et le collecteur 26 porté par ce support à se mou- voir brusquement dans le sens opposé en surmontant l'action du ressort 35. La disposition doit être telle que le collecteur commence ce mouvement juste avant la fin du découpage de chaque tranche. Démette façon, la partie arrière traînante de la tran- che se trouve légèrement tirée et un peu tendue et tombe plus nettement que si elle était simplement à même de tomber sur un collecteur fixe. Le collecteur revient à sa position initia- le sous l'action du ressort 35 au commencement de la course de retour du couteau.
Il est bien entendu que la construction décrite et repré- sentée n'a été indiquée qu'à titre d'exemple et qu'elle est susceptible de recevoir des modifications rentrant dans le cadre de cette invention. Par exemple, si on le désire, le bras porte-couteau peut être incliné vers le bas pour pivoter autour d'un axe prévu à son extrémité supérieure.
Bien que la plaque de garde 20 soit placée dans le même plan que le couteau et logée entièrement dans un évidement du couteau, cette plaque, dans une construction dans laquelle le couteau est incliné légèrement par rapport au plan de tranchage, serait relevée ou inclinée par rapport au plan du couteau à la partie arrière (c'es-à-dire la partie qui est située le plus en arrière pendant les courses de tranchage).

PATENT OF INTENT "Meat slicer machine II.
This invention relates to machines for cutting meat and other edible substances into successive slices.
The slicing machine to which the invention is applied comprises a chute (or substance carrying member) which is inclined so that the substance is dragged downwards by sliding on it by gravity, a knife holder pivoting to which a back and forth movement can be imparted with respect to the inclined substance holder, a rotary knife supported to rotate in this knife holder and placed in an inclined plane, a gauge or guide adjusting the thickness of the slices, this gauge being connected to the knife holder, and a guard piece against which the substance abuts and which pivots with the knife holder, this piece being arranged so as to hide the body of the knife but to expose the cutting edge to the cutting area.

that it can receive a stack of slices of progressively increasing height and / or which is movable towards the end of each cutting operation so as to facilitate the formation of a well-ordered stack. The first of these movements would take place periodically away from the slicing plane and could be carried out by the slices themselves; and the second would take place in the opposite direction to the slicing stroke.
A slicing machine according to the invention will now be described by way of example, with reference to the appended schematic drawing in which:
Figure 1 is a vertical section of the machine.
Figure 2 is a plan view looking in the direction of arrow II in Figure 1.
Figure 3 shows construction details in vertical section, the section taken approximately by line III-III of Figure 2.
The machine shown is provided with a knife rotated by a motor and a knife holder which is rotated manually. As shown, an electric motor 10 is housed in a frame forming a base 11, and the knife 12 is carried by an arm 13 which is mounted to pivot at one of its ends on a journal 14a forming part of a journaling shaft 14. in the frame 11, this arm 13 being provided with a pushing and pulling handle 15. The knife holder arm 13 tilts upwards, and the shaft 16 of the knife is a sleeve mounted to rotate at the upper end of the arm. A chain and pinion transmission 17 serving to actuate the knife is enclosed within the arm and actuated by the motor 10 by means of a worm reduction gear 18 housed in the frame 11.
The arm 13 also carries an adjustable gauge or slice thickness regulator 19, one of whose edges is curved to match the curvature of the circular cutting edge, and a plate of @

guard 20 against which the substance abuts, this plate being rigidly fixed and masking the body of the knife. A mechanism for bringing the plate 19 closer to and away from the slicing plane is shown at 19a. The arrangement is such that the substance slides across the parallel faces of the gauge plate 19 and the gatde plate 20 and is subjected to the action of the knife, the edge of which is exposed between the plates.
The substance to be sliced is held in a gravity drive trough or chute 21, which has approximately the shape of a V and is adjustably attached, at 22, to a column 23 carried by the frame. chute being arranged perpendicular, or almost, to the cutting plane of the knife.
The weight of the pivoting knife-holder arm and the parts connected thereto is supported by a fixed arched rail or path 24 provided on the frame and on which rollers 25 carried by the arm roll.
The slices are received by a collector 26 composed of a plate or rimmed plate provided on the frame, below the slicing zone.
The wafer collector 26 is carried by arms 27 mounted to pivot on a support 28 and supported by a spring 29 wound around an arcuate guide rod 30. The arrangement is such that the weight of the wafers resting on the collector 26 tends to push this collector and to contract the support spring; and there therefore comes a time when, in the operation of the machine, each wafer deposited lowers the collector a short distance, thus creating the necessary space for other wafers.
The movable support 28 of the wafer collector is mounted to slide on two horizontal guide rods 31, 32 which are fixed to brackets 33, 34 of the frame, a spring 35 wound around the rod 31 constantly urging the support 28. in the sense of @

the cutting stroke of the knife, towards a damping pad 36 which constitutes a limit stop. A lever 37 supported at an intermediate point 37a of its length by the motor frame is connected by a pin and slot assembly 38 provided at its lower end to the support 28, and its upper end is provided with a plate 39 which cooperates with a stopper formed by a roller 40 integral with the knife-holder arm.
In operation, the roller 40 abuts against the lever 37 towards the end of each slicing stroke and thus forces the support 28 and the collector 26 carried by this support to move suddenly in the opposite direction, overcoming the action of the spring. 35. The arrangement must be such that the collector begins this movement just before the end of the cutting of each slice. In this way, the trailing rear part of the blade is slightly pulled and a little stretched and falls more sharply than if it were simply able to fall on a fixed collector. The collector returns to its original position by the action of the spring 35 at the beginning of the return stroke of the knife.
It is understood that the construction described and represented has been indicated only by way of example and that it is capable of receiving modifications coming within the scope of this invention. For example, if desired, the knife arm can be tilted down to pivot about an axis provided at its upper end.
Although the guard plate 20 is placed in the same plane as the knife and housed entirely in a recess of the knife, this plate, in a construction in which the knife is tilted slightly with respect to the slicing plane, would be raised or tilted by in relation to the plane of the knife at the rear part (i.e. the part which is located furthest back during the slicing strokes).
