Abstract

Procedimiento de elaboración de productos a partir de masa caliente, que comprende elaborar (1) una masa mediante cocción, que se dosifica (2) en un primer recipiente (7) hasta un nivel previamente establecido, y en el que con la masa caliente se inserta (3), un primer molde cortador formador (8) dotado de una pluralidad de celdillas tubulares (9) con la forma del producto a obtener, por ejemplo una croqueta, para llenar cada una de las celdillas con la masa. Seguidamente se aplica un enfriamiento rápido (4), formándose las croquetas, y mediante un primer molde eyector (16) se expulsan las croquetas formadas obteniendo una pluralidad de croquetas simultáneamente. Si existiera masa sobrante, de volumen insuficiente para llenar un primer recipiente hasta el nivel previamente establecido, comprende dosificar (2) la masa sobrante en caliente en un segundo recipiente (7’), dotado de un separador (18) desplazable, que tras el volcado se desplaza hasta que la masa sobrante alcanza el nivel previamente establecido y se repiten las fases anteriormente descritas.
