Abstract

La presente se refiere, de modo general a la germinación y preparación de extractos acuosos de cereales (por ejemplo preparado mediante maceración), incluyendo procesos utilizados para producir cerveza. También de este modo provee métodos para germinación rápida y preparación de extractos acuosos de cereales. Los métodos aceleran significativamente el proceso de preparar mosto para la producción de bebidas en base a cereal, mientras mantiene el potencial de preparar dicho mosto con bajos niveles de b-glucano. Además es igualmente aplicable a la germinación y preparación de extractos acuosos de otros granos de cereal -incluyendo arroz, sorgo, maíz, mijo y trigo- así como al proceso de fabricación de cerveza que comprende adjuntos. Reivindicación 18: Un método para producir un extracto acuoso de un cereal, comprendiendo dicho método las etapas de: a) proveer granos de un cereal; b) someter los granos de cereal a una etapa de germinación durante el rango de 48 a 108 h obteniendo de ese modo granos germinados; c) dividir finamente dichos granos germinados mientras dichos granos germinados tienen un contenido de agua de al menos 20%; y d) preparar un extracto acuoso de dichos granos germinados finamente divididos, con la condición de que dichos granos de cereal no tienen un contenido de agua menor a 20% en ningún momento entre las etapas b) y d), produciendo de ese modo un extracto acuoso del cereal.
