Abstract

La presente invención se refiere, de modo general a la germinación y preparación de extractos acuosos de cereales (por ejemplo preparado mediante maceración), incluyendo procesos utilizados para producir cerveza. La invención de este modo provee métodos para germinación rápida y preparación de extractos acuosos de cereales. Los métodos aceleran significativamente el proceso de preparar mosto para la producción de bebidas en base a cereal, mientras mantiene el potencial de preparar dicho mosto con bajos niveles de ß-glucano. La presente invención es igualmente aplicable a la germinación y preparación de extractos acuosos de otros granos de cereal ¿incluyendo arroz, sorgo, maíz, mijo y trigo – así como al proceso de fabricación de cerveza que comprende adjuntos.
