Abstract

La composición comprende un ingrediente comestible y al menos un tri- y/o tetra-sacárido, donde el ingrediente comestible tiene una sensación de sabor desagradable cuando se ingiere oralmente en ausencia de al menos un tri- y/o tetra-sacárido y donde el tri- y/o tetra-sacárido está presente en la composición en una concentración para reducir o enmascarar la sensación de sabor desagradable. Los tri y tetra-sacáridos se utilizan en alimentos, bebidas y otros productos consumibles para enmascarar o reducir el sabor desagradable de ciertos componentes también presentes en esos productos, como el sabor amargo de ciertos edulcorantes de alta intensidad. Por lo tanto, se mejoran las cualidades organolépticas de los productos. En particular, la melecitosa, la maltotriosa y la maltotetraosa reducen eficazmente el amargor de los productos consumibles que contienen glicósidos de esteviol, como el rebaudiósido A.
