Abstract
La solicitud hace referencia a un mejor proceso para producir etanol a partir de material con contenido de almidón en donde la sacarificación y/o la fermentación se lleva a cabo a una temperatura por debajo de la temperatura de gelatinización inicial en presencia de glucoamilasa y a-amilasa, y opcionalmente una proteasa y/o una composición de enzima celulolítica; en donde el organismo de fermentación es una cepa de la levadura Saccharomyces que provee un mayor estímulo en el rendimiento de etanol y una menor producción de glicerol en comparación con ETHANOL REDTM bajo las mismas condiciones de fermentación. La solicitud también hace referencia a las cepas de levadura Saccharmyces y a sus derivados, como también a las composiciones que comprenden tales cepas de levadura, adecuadas para usar en un proceso de la solicitud.
