Abstract

Una composición de fibras de tomate que tiene un contenido de materia seca de al menos 1% en peso, en la cual al menos el 80% en peso de dicha materia seca es insoluble en agua, donde la citada composición de fibra comprende, en peso de la materia seca: 15 - 50% de celulosa; 5 - 45% de pectina; 0 - 10% de monosacáridos, donde dichos monosacáridos se seleccionan entre fructosa, glucosa y sus combinaciones y 0,003 - 1% de licopeno; en la cual la composición de fibras contiene menos del 60% de pectina en peso de la celulosa. La composición de fibras de tomate tiene propiedades excelentes de estructuración del agua. Otro aspecto se refiere a un método de fabricación de un producto seleccionado entre un producto alimenticio, una bebida y una formulación nutricional, donde dicho método comprende incorporar en el citado producto la composición de fibras de tomate antes citada. Provee, asimismo, un proceso para fabricar una composición de fibras de tomate.
