Abstract
Se describen en general extractos y bebidas con nutrientes mejorados, sabores y texturas y sus métodos de preparación. Algunas realizaciones se refieren a extractos y bebidas producidas a través de técnicas de extracción a alta presión. Reivindicación 1: Una composición comestible caracterizada porque comprende: un extracto de una sustancia comestible; el extracto resultante de la extracción de la sustancia comestible en un medio de extracción comprende agua a una temperatura de extracción de entre aproximadamente 0ºC a aproximadamente 80ºC y a una presión de extracción de al menos aproximadamente 2000 bar. Reivindicación 8: La composición comestible de la reivindicación 1, caracterizada porque la sustancia comestible comprende café. Reivindicación 12: La composición comestible según la reivindicación 1, caracterizada porque la sustancia comestible comprende al menos una entre cerezas del café verdes, cerezas de café rojas, flores de café, cáscara de cereza de café, pulpa de cereza de café, tallo de cereza de café, cereza de café plateada, mucílago de cereza de café, pergamino de cereza de café, epicarpio de cereza de café, granos de café verde y mesocarpio de cereza de café. Reivindicación 15: La composición comestible de la reivindicación 1, caracterizada porque comprende además al menos uno entre un componente de café, un componente del té, un componente de cacao, un componente de chocolate, un componente edulcorante y un componente saborizante. Reivindicación 16: La composición comestible de la reivindicación 1, caracterizada porque comprende además al menos uno entre un extracto de café, café concentrado, café en polvo, aceites de café, café soluble, aromas de café, destilados, polvos saborizantes aceites saborizantes, especias, granos de cacao molidos o pulverizados, vainas de vainilla molidas o pulverizadas, vitaminas, antioxidantes, componentes de bienestar, nutracéuticos, fibra dietética, aceite de omega 3, aceite de omega 6, aceite de omega 9, un flavonoide licopeno, selenio, b-caroteno, resveratrol, inulina, b-glucano, 1-3,1-6 b-glucanos, b-glucano de cebada, b-glucano de cebada, un extracto vegetal, extracto seco de café verde, extracto de café verde húmedo, café pulverizado, café tostado, café tostado y molido, café soluble, incluyendo café pulverizado y un extracto de hierbas. Reivindicación 19: Un método de fabricación de una composición comestible, caracterizado porque comprende: la extracción de una sustancia comestible en un medio de extracción a una temperatura de extracción y a una presión de extracción para formar un extracto de la sustancia comestible, y el procesamiento del extracto de la sustancia comestible para formar la composición comestible, en el que el medio de extracción comprende agua, y en el que la presión de extracción es de al menos aproximadamente 2000 bar.
