Abstract

En la Parte A, la presente se relaciona con composiciones X que comprenden (1) al menos un agente bloqueante amargo; (2) al menos un compuesto carbonilo; y (3) al menos una lactona, en particular con composiciones X que comprenden (i) naringina; (ii) salicilaldehído metoxi; (iii) siringaldehído; (iv) massoia lactona; y (v) whiskey lactona; al uso de composiciones X para modificar, enmascarar, reducir y /o eliminar un sabor desagradable, un dejo o dulce perdurable de al menos un endulzante, un intensificador de dulce o un producto consumible; y con un proceso para la preparación de las composiciones X. Además la presente se relaciona con composiciones endulzantes que comprenden al menos un endulzante y las composiciones X; a un método para proporcionar composiciones de endulzantes o composiciones intensificadoras de dulce; a métodos para modificar, enmascarar, reducir y/o eliminar un sabor desagradable, un dejo o dulce perdurable de al menos un endulzante o intensificador de dulce; y considerando composiciones endulzantes que comprenden composiciones X. La presente también se relaciona con composiciones de productos consumibles que comprenden un producto consumible y las composiciones X; a métodos para modificar, enmascarar, reducir y/o eliminar un sabor desagradable, un dejo o dulzura perdurable de una composición de un producto consumible; y a métodos para proporcionar un sabor intenso a productos consumibles. En la Parte B, la presente, entre otras cosas, se relaciona con una composición de endulzante que comprende (ii) un endulzante; y (ii) al menos un saborizante, en donde al menos un saborizante es adecuado para modificar, enmascarar, reducir y/o eliminar un sabor desagradable de un endulzante en una composición de un producto consumible formado mediante el agregado de una composición endulzante a un producto consumible; y en donde el peso promedio de al menos un saborizante al endulzante en la composición del producto consumible es tal que la dulzura del endulzante se detecta cuando se prueba la composición del producto consumible y el sabor de al menos un saborizante no se detecta probando la composición del producto consumible. La presente además se relaciona con una composición intensificadora de dulce que comprende (ii) un endulzante; y (ii) al menos un saborizante, en donde al menos un saborizante es adecuado para modificar, enmascarar, reducir y/o eliminar un sabor desagradable de un intensificador de dulce en una composición de un producto consumible formado mediante el agregado de una composición intensificadora de dulce y un endulzante a un producto consumible, y en donde el peso promedio de al menos un saborizante al intensificador de dulce en la composición del producto consumible es tal que el intensificador de dulce es capaz de intensificar el dulce en un endulzante presente en la composición del producto consumible y el sabor de al menos un saborizante no se detecta probando la composición del producto consumible. La presente además se relaciona, entre otras cosas, con los productos consumibles respectivos.
