Abstract

Un producto para beber que incluye agua, un color derivado de fuentes naturales y un compuesto en una cantidad efectiva para inhibir el desvanecimiento de al menos dicho color derivado de fuentes naturales. El compuesto es un ácido insaturado y puede seleccionarse del grupo que consiste en ácido maleico, anhídrido maleico, ácido aconítico, ácido mesacónico, ácido itacónico y ácido fumárico y combinaciones de los mismos. La incorporación del compuesto puede ser particularmente útil para inhibir el desvanecimiento del color del producto para beber, bajo tensión térmica. Los colores derivados de fuentes naturales pueden ser una antocianina, chalconas tales como cartamina y/o un color derivado de la reacción de un iridoide y aminoácidos y combinaciones de los mismos. El compuesto puede estar presente en una cantidad comprendida entre aproximadamente 30 ppm y 1000 ppm. El compuesto puede ser efectivo para evitar el desvanecimiento del color incluso en presencia de ácido ascórbico, el cual promueve el desvanecimiento de los colores derivados de fuentes naturales. Asimismo, se provee un método para inhibir el desvanecimiento de los colores derivados de fuentes naturales en una composición de bebida.
