Abstract
Un procedimiento para elaborar un precursor en polvo para preparar una bebida ácida después de mezclar el precursor en polvo con un líquido, comprendiendo el procedimiento los pasos de: a) preparar una primera lechada que comprende una fuente de proteína y un estabilizante, teniendo dicha primera lechada un pH neutro o ácido; b) ajustar el pH de la primera lechada, si es necesario, a un valor en el rango entre 2 y 6, preferentemente entre 3,5 y 4,2; y c) secar por rociado la primera lechada después del paso a) o del paso b).
