Abstract

Un material saborizante o aroma derivado de un cítrico se desoxida, o su producción se lleva a cabo en una atmósfera desoxidada para inhibir la oxidación del mismo. El material saborizante o aroma desoxidado resultante se agrega para inhibir la oxidación de alimentos, bebidas, productos aromáticos y medicamentos, con lo cual se inhibe la oxidación de estos productos; específicamente, se proporciona un inhibidor de la oxidación y del amarronamiento que comprende como ingrediente efectivo el material saborizante o aroma desoxidado.
