Abstract
Se describe un proceso para incrementar el sabor frutal de productos alimenticios con un contenido reducido de material de fruta, que comprende agregar alos mismos una composicion amilácea que resulta de un proceso en donde una pasta de harina decer eal se sujeta primero a impregnacion y posteriormente esesterilizada y acidificada y/o fermentada. También se describe la composicion amilácea de aplicacion en dicho proceso y los productos alimenticios asíobtenidos.
