Abstract
Un procedimiento para proporcionar un producto a base de tomate que comprende: añadir un extracto de pectina metilesterasa a una pasta de tomate dispersada en caliente; incubar la pasta de tomate dispersada en caliente con la pectina metilesterasa; inactivar la pectina metilesterasa; en el que, la etapa b) se lleva a cabo en condiciones tales que la pasta de tomate aumenta su consistencia pero no gelifica sustancialmente. Con preferencia, el extracto de pectina metilesterasa se extrae de tomates verdes estabilizados por congelación y/o secado.
