Abstract

Una emulsion comestible de aceite en agua que comprende: 35-70% (en peso) de aceite comestible; 0,5-10% (en peso) de emulsionante derivado de yema de huevo; 0,3-1,5% (en peso) de caseína; 65-25% (en peso) de agua; en la cual por lo menos el 60% de las gotas de aceite tiene un tamano de 1-5 microm. Dicha composicion, con preferencia, tiene un valor de Stevens de 60-160, cuando se mide usando un Analizador de Texturas Stevens, a 20 degree C, después de 2 semanas de almacenamiento a 20 degree C, usando una velocidad de 2 mm/s y una distanca de 20 mm.
