Abstract
La presente se refiere a un proceso para la preparacion de trozos de verduras o frutas, en particular a un proceso para preparar trozos de verduras ofrutas que sean más consistentes o que muestren menor desgaste/desintegracion al ser sometidos a esfu erzo mecánico, proceso que no requiera la adicion decationes divalentes como el calcio.
