Abstract
本发明提出一种休闲食品,属于食品领域。所述休闲食品包括棒状体以及包裹在棒状体其中一端的食品部分,所述食品部分包括坚果碎、谷物碎及水果果干碎中的至少一种,并且所述食品部分由食品粘合剂粘接成固形体。本发明打破了食品行业的传统观念,将坚果类食品创新性地应用于棒状体上,制成棒棒糖样式,并结合棒状体的固定端的特殊构造,使得食品部分能够稳固地固定于棒状体上,而且消费者的手部无需碰触食品部分即可食用,方便快捷。本发明中的坚果、谷物和/或水果的占比大于食品部分重量的一半,营养丰富,且不会造成糖摄取过量,是适合于各年龄层消费者的休闲食品。
Description
本发明涉及食品技术领域,具体而言,涉及一种休闲食品。
棒棒糖是以糖果固定于棒状体上,在品尝糖果的同时增加了趣味性,而且由于手部不直接接触糖果,因此较为卫生。棒棒糖在日常生活中受到了各个年龄层人群的喜爱。
坚果类零食通常以整块果实或通过粘合剂对坚果碎进行粘接的坚果棒的样式出现。然而,市面上并没有将坚果棒制成棒棒糖样式的零食,这是因为坚果碎本身没有粘性,将坚果碎通过粘合剂粘接固定后的结构通常不稳定,再固定于棒状体上时极易造成坚果碎松散、脱落,不便于食用及运输。然而,坚果棒由于没有设置棒状体,需要用手直接抓取,不够卫生,容易遭到细菌的污染。
因此,为了克服上述问题,本发明的发明人提供一种休闲食品,其主要以坚果碎、谷物碎及水果果干碎组成,并设置在棒状体上,不仅增加食用趣味性,而且健康、卫生。
发明内容
本发明旨在至少解决现有技术中存在的技术问题之一。
本发明的主要目的在于地将坚果碎等食物以棒棒糖的形式呈现,在保证食品完整性的同时,确保食用健康、卫生,而且富有趣味性。
为实现上述目的,本发明提供一种休闲食品,其中,所述休闲食品包括棒状体以及包裹在棒状体其中一端的食品部分,所述食品部分包括坚果碎、谷物碎及水果果干碎中的至少一种,并且所述食品部分由食品粘合剂粘接成固形体。
本发明创新地将坚果碎、谷物碎及水果果干碎中的至少一种以食品粘合剂粘接成固体,并包裹于特制的棒状体2上,使得消费者可以以手部握持食用,干净卫生,而且具有食用趣味性。
在一个优选实施例中,所述坚果碎中的坚果采用扁桃仁、核桃仁、花生、瓜子、榛子、腰果、夏威夷果、松子和芝麻中的至少一种。
在一个优选实施例中,所述坚果碎的颗粒尺寸为1mm~5mm。
在一个优选实施例中,所述谷物碎中的谷物采用大米、小米、小麦、荞麦、燕麦、薏仁米、豆类和玉米中的至少一种。

下面参照图1和图2来描述根据本发明第一实施例提供的休闲食品10。所述休闲食品10包括棒状体2以及包裹在棒状体1其中一端的食品部分1,所述食品部分包括坚果碎、谷物碎及水果果干碎中的至少一种,并由食品粘合剂粘接成固形体。
通常,坚果碎、谷物碎及水果果干碎中的至少一种很难牢靠地包裹于棒状体上,因此市面上出售的都是以坚果碎本身成形为棒状体进行食用。 本发明创新地将坚果碎、谷物碎及水果果干碎中的至少一种以食品粘合剂粘接成固体,并包裹于特制的棒状体2上,使得消费者可以以手部握持食用,干净卫生,而且具有食用趣味性。
优选地,所述坚果碎、谷物碎和/或水果果干碎的重量至少应占食品部分总重量的51%,使得营养密集成分在配方中占主导地位。
其中,在一个优选实施例中,所述坚果碎中的坚果可以采用扁桃仁、核桃仁、花生、瓜子、榛子、腰果、夏威夷果、松子、芝麻中的至少一种,但不以此为限。
坚果碎的颗粒尺寸约为1mm~5mm,根据坚果特性的区别可以制成具有不同颗粒尺寸的坚果碎。
在一个优选实施例中,所述谷物碎中的谷物可以采用大米、小米、小麦、荞麦、燕麦、薏仁米、豆类、玉米中的至少一种,但不以此为限。其中,所述谷物也可以采用加工后的谷物碎,例如脆米(crispy rice)等等。
所述谷物碎的颗粒尺寸约为1~3mm,根据谷物特性的区别可以制成具有不同颗粒尺寸的谷物碎。
在一个优选实施例中,所述水果果干碎中的水果果干可以采用葡萄干、蔓越莓干、草莓干、蓝莓干、芒果干、奇异果干、苹果干中的至少一种,但不以此为限。
所述水果果干碎的颗粒尺寸不应大于5mm,根据水果果干碎特性的区别可以制成具有不同颗粒尺寸的水果果干碎。
通过坚果碎、谷物碎及水果果干碎的颗粒尺寸进行严格控制,以有效降低食用时的窒息风险,而且可以在保有咀嚼口感的同时确保食品部分形状的可控性和表面平整度。
此外,所述食品部分可以添加香草、天然香料等,以增加产品风味。需要说明的是,本发明不含人工香料、人工色素和防腐剂,不使用反式脂肪,有利于消费者的身体健康。
在一个优选实施例中,所述食品粘合剂采用较软的粘性食材,例如糖浆、蜂蜜等,其在提供良好的食品粘合性的同时还能使食品部分具有柔软的质地,尤其针对儿童消费者,易于咀嚼,食用感受良好。
此外,如图3至图5所示,为了减少坚果碎、谷物碎和/或水果果干碎的氧化程度,以及进一步增强食品部分的完整度,在一个优选实施例中,本发明的食品部分的表面还可以涂覆有涂层3。
所述涂层可以采用巧克力或酸奶进行涂覆。其中,所述巧克力可以选用黑巧克力、白巧克力、草莓巧克力、抹茶巧克力等等。在一个实施例中,涂层可以采用复合白巧克力及草莓粉末混合而成,从而提供草莓风味的涂层。在另一个实施例中,涂层可以采用复合白巧克力、酸奶粉末及柠檬酸混合而成,以增加丰富味觉。
优选地,所述涂层的粘度应被控制在1500cps以下,以便于生产过程中的脱模,并且在食用时可以提供较佳口感。
如图3所示,本发明的第二实施例中,所述涂层可以采用全包覆的形式包覆于食品部分上,即,使得所述食品部分的两个表面及连接于两个表面之间的侧面均由涂层进行包覆,以实现最大程度地防氧化效果,而且在食品部分不慎跌落或者运输过程中,全包覆形式的涂层都可以最大程度地确保食品部分的完整性,不易破损,不影响销售。
此外,主要出于成本考虑,所述涂层也可以部分包覆食品部分,在本发明的第三实施例中,所述涂层3采用半包覆(如图4所示,仅包覆食品部分的一半)形式,在本发明的第四实施例中,所述涂层3采用间隔包覆(如图5所示,以间隔的条状涂层对食品部分进行包覆)形式等,采用部分包覆食品的形式,既可以包覆食品部分,以起到避免氧化、确保食品完整性的作用,又能节省涂层原料并提供独特外形。
为了便于食品部分的食用,特别是便于儿童食用,所述食品部分的径向尺寸优选为40mm~45mm。经过多次试验,可以验证当食品部分的径向尺寸选取在这个范围内时,食品部分在生产过程中易于脱模,而且在运输过程中能够较好地保持完整性。
在一个优选实施例中,本发明的食品部分可以采用多种形状,例如横截面为圆形、方形、三角形或不规则的动物造型等,例如米奇造型(如图6所示,较大圆形上方对称地连接有两个较小圆形),或是大象造型,以给消费者带来美好的视觉感受及食用趣味性。
所述棒状体2为扁平的长条结构,其一端为用于连接食品部分1的固定端21,另一端为握持端22,固定端21和握持端22之间为连接杆23。其中,所述固定端21的宽度大于连接杆23的宽度,固定端21具有镂空部211,所述镂空部211便于使食品部分穿过该镂空部211进行粘接,进而有利于食品部分的固定。
优选地,所述镂空部211的数量为一个,且为圆形镂空结构,便于制造,且确保食品部分粘接的稳定性。当然,所述镂空部211的形状并不以此为限。
再优选地,所述镂空部211的数量可以为至少两个,且多个镂空部可以组成特定的图案,如笑脸图案,使得消费者在使用完毕可以看到镂空部的图案,增加趣味性。
优选地,所述棒状体2的厚度方向与所述食品部分的厚度方向一致,且棒状体2的固定端的最大径向尺寸小于食品部分1的最大径向尺寸,使得棒状体2不至于暴露于食品部分1之外。
此外,所述握持端22大体上呈三角形,便于消费者握持,尤其是便于儿童握持。
