Abstract

La presente se relaciona con el campo de las composiciones de alimentos, y más en particular se relaciona con las barras con base de cereales fortificadas con nutrientes beneficiosos, y que pueden ser preparadas sin horneado ni cocción. Existe la necesidad en la materia de producir una barra alimenticia que pueda suministrar nutrientes y energía prolongada al tiempo que proporciona un sabor deseado y agradable. Estas barras sin cocción son básicamente no perecederas, fáciles de transportar y consumir. Las barras sin cocción fortificadas proporcionan una porción de los requerimientos diarios de minerales y vitaminas. Es un objeto de la presente proporcionar una barra de alimento nutritivo que cuente con una mezcla de proteínas, carbohidratos, grasas, vitaminas y minerales, que pueda proporcionar energía prolongada para el consumidor, y que además tenga el sabor atractivo y la textura al mascarla que se asocia con la golosina en barra. Una barra de alimento nutritivo para proporcionar energía prolongada al consumidor, dicha barra presenta un núcleo que es entre el 60% y el 90% en peso de dicha barra y un recubrimiento que es entre el 10% y el 40% en peso de dicha barra, donde dicha barra comprende una mezcla de vitaminas, minerales, proteínas entre el 5% y el 25% en peso de dicha barra, carbohidratos entre el 45% y el 85% en peso de dicha barra, y grasas entre el 8% y el 20% de dicha barra; donde dicho núcleo es una mezcla de cereal no cocido que comprende un componente de crocante de arroz presente entre el 10% y el 30% en peso de dicha barra, dicho componente tiene al menos un componente crocante de arroz extrudado y al menos un componente de crocante de arroz tostado en una proporción de 80:20 a 40:60 en peso; y donde dicho recubrimiento es un recubrimiento de confitería seleccionado de chocolate y recubrimientos de compuestos. Una barra de alimento que tiene entre 100 y 300 calorías con vitaminas, proteínas, carbohidratos, y grasas, dicha barra tiene un núcleo de cereales no cocidos que es entre el 60% y el 90% en peso de dicha barra y un recubrimiento que es entre el 10% y el 40% en peso de dicha barra, donde el recubrimiento es un recubrimiento de confitería que tiene entre el 20% y e 40% de grasa, y seleccionado de recubrimientos de compuestos y chocolate; y donde dicho núcleo tiene un porcentaje en peso de la barra que es del 15% al 40% de aglutinante que comprende jarabede maíz, del 10% al 40% de granos de cereal, del 1% al 10% de fibras, del 4% al 20% de proteínas, del 2% al 8% de fructosa, del 0,05% al 5% de vitaminas y mezclas de minerales, del 0,0% al 3% de saborizante, y del 0,0% al 30% de aditivos de textura; dicho núcleo tiene un componente de crocante de arroz que es entre el 10% y el 30% en peso de dicha barra, dicho componente comprende al menos un componente de crocante de arroz extrudado y al menos un componente crocante de arroz inflado tostado en una proporción de 80:20 a 40:60 en peso.
