Abstract

また、市場ではより軽い口当たりの製品が求められる傾向にある。油中水型乳化組成物に乳化剤を配合することでバタークリームの比重を下げることができるが、乳化剤の使用は消費者に好まれない場合がある。また、比重を短時間で下げることができれば作業性の改善にも寄与できる。
油中水型乳化組成物を泡立てて使用する場面としては、他にもシュガーバッター法による焼き菓子生地が挙げられる。シュガーバッター法とはバターケーキなどの製造方法の1つであり、油中水型乳化組成物を室温に戻し、泡立て器でクリーム状とし、糖を加えてすり混ぜ、さらに溶き卵を少しずつ加えて混合し、小麦粉を加えて生地を調製する。作業性の良好な油中水型乳化組成物が提供できれば、洋菓子分野で幅広く用いることが可能となる。
特許文献1は特定組成および含有量のエステル交換油と液状油を含有するバタークリーム用油脂組成物に関する出願であり、口どけ、可塑性、ホイップ性能、および保型性に優れるとある。
特許文献2はパーム系油脂とラウリン系油脂とのエステル交換油、液状油脂、水素添加処理されていないパーム系油脂を含み、特定SFCであるバタークリーム用油脂組成に関する出願であり、クリーミング性、低油浸性・低離水性及び保形性に優れるとある。
ただし、いずれも作業性の改善を提供するものではない。
特許文献2はパーム系油脂とラウリン系油脂とのエステル交換油、液状油脂、水素添加処理されていないパーム系油脂を含み、特定SFCであるバタークリーム用油脂組成に関する出願であり、クリーミング性、低油浸性・低離水性及び保形性に優れるとある。
ただし、いずれも作業性の改善を提供するものではない。
特許文献3によれば液油を27~95%含有し油相の20℃でのSFCが5~18である油中水型乳化物を40℃程度に加温し生地に添加することで、乳化剤不使用でスポンジ生地を起泡させることができる。しかしこの油中水型乳化物自体の起泡性の有無については開示されていない。
本発明は乳化剤を配合せずに、作業性の良好な油中水型乳化組成物を提供することを課題とする。
本発明者らは特定の物性を有する油中水型乳化組成物、さらに詳しくは特定組成のエステル交換油脂を用いて調製した特定脂肪酸組成の油中水型乳化組成物が幅広い温度において良好なホイップ性を示すことを見出し、本発明を完成させた。
すなわち本発明は
(1)油相が下記すべての条件を満たすことを特徴とする起泡用油中水型乳化組成物、
(a)上昇融点30℃以下
(b)20℃の硬さが500gf以下
(c)15℃硬さ/20℃硬さの比が3以上
(2)該油相が下記すべての条件を満たす、(1)に記載の油中水型乳化組成物、
(d)20℃でのSFC(固体脂含量)が1~20%
(e)15℃でのSFCが1~30%

本発明によれば乳化剤を含有せず、ホイップ時の良好な作業性、具体的には幅広い作業温度帯と迅速な比重低下を備え、かつ最終比重が通常のバターやマーガリン類よりも低い油中水型乳化組成物を提供することができ、これを用いることで軽い口当たりの洋菓子を簡便に製造することができる。
以下、本発明を具体的に説明する。
(油中水型乳化組成物)
本発明の油中水型乳化組成物はバタークリーム用途に代表される起泡(ホイップ)用であって、乳化剤を含有せずに幅広い作業温度域と迅速な比重低下を可能とするものであり、次項より説明する物性および組成を備えることを特徴とする。

(上昇融点)
本発明の油中水型乳化物は油相の上昇融点が30℃以下、好ましくは15℃以上30℃以下、さらに好ましくは20~30℃、最も好ましくは20~27℃である性質を備える。油相の上昇融点がこれらの値であることで、乳化剤を用いずに、作業性の良好な油中水型乳化組成物を得ることができる。
なお上昇融点とは毛細管に充填した試料が所定条件での加熱により軟化して上昇を始める温度を指し、日本油化学会制定規準油脂分析試験法(1)に記載される方法で測定される。
本発明の油中水型乳化物は油相の上昇融点が30℃以下、好ましくは15℃以上30℃以下、さらに好ましくは20~30℃、最も好ましくは20~27℃である性質を備える。油相の上昇融点がこれらの値であることで、乳化剤を用いずに、作業性の良好な油中水型乳化組成物を得ることができる。
なお上昇融点とは毛細管に充填した試料が所定条件での加熱により軟化して上昇を始める温度を指し、日本油化学会制定規準油脂分析試験法(1)に記載される方法で測定される。
(硬さ)
本発明の油中水型乳化組成物は、その20℃における硬さが500gf以下、好ましくは1gf以上400gf以下、さらに好ましくは1gf以上350gf以下である。さらに15℃における硬さと、20℃における硬さの比(15℃硬さ/20℃硬さ)が3以上、好ましくは3.2以上8以下、より好ましくは3.3~7.5である。数値がこの範囲外では本発明の効果が得られにくい場合がある。
なおここでの硬さはレオメーター値であり、プランジャー径10mm、進入速度5cm/minにて測定したものとする。
本発明の油中水型乳化組成物は、その20℃における硬さが500gf以下、好ましくは1gf以上400gf以下、さらに好ましくは1gf以上350gf以下である。さらに15℃における硬さと、20℃における硬さの比(15℃硬さ/20℃硬さ)が3以上、好ましくは3.2以上8以下、より好ましくは3.3~7.5である。数値がこの範囲外では本発明の効果が得られにくい場合がある。
なおここでの硬さはレオメーター値であり、プランジャー径10mm、進入速度5cm/minにて測定したものとする。
(SFC)
本発明の油中水型乳化組成物は、油相のSFC(固体脂含量)が20℃で1~20%、好ましくは2~18%、より好ましくは2~15%であり、かつ、15℃で1~30%、好ましくは3~28%、より好ましくは5~25%である。SFCがこれらの値を示すことで、乳化剤を用いずに、作業性の良好な油中水型乳化組成物を得ることができる。
なおSFCはSolid Fat Contentの略称であり、一定の温度下で油脂中に存在する固体脂の含量(%)を示す。SFCは核磁気共鳴(NMR)装置により測定することができる。
本発明の油中水型乳化組成物は、油相のSFC(固体脂含量)が20℃で1~20%、好ましくは2~18%、より好ましくは2~15%であり、かつ、15℃で1~30%、好ましくは3~28%、より好ましくは5~25%である。SFCがこれらの値を示すことで、乳化剤を用いずに、作業性の良好な油中水型乳化組成物を得ることができる。
なおSFCはSolid Fat Contentの略称であり、一定の温度下で油脂中に存在する固体脂の含量(%)を示す。SFCは核磁気共鳴(NMR)装置により測定することができる。
(脂肪酸組成)
本発明の油中水型乳化組成物は、油相の構成脂肪酸組成において、ラウリン酸含量は5~22重量%が好ましく、より好ましくは7~22重量%であり、パルミチン酸含量は5~15重量%、より好ましくは8~12重量%であり、ステアリン酸含量は3~10重量%、より好ましくは4~7重量%であり、かつ、ステアリン酸/パルミチン酸の重量比が0.2~1であることが好ましい。各脂肪酸の量がこれらの範囲にあることで、乳化剤を用いずに、作業性の良好な油中水型乳化組成物を得ることができる。
なお脂肪酸組成は公知の方法、日本油化学協会基準油脂分析試験法(1996年版)2.4.1.2メチルエステル化法(三フッ化ホウ素メタノール法)の規定に準じて測定することができる。
本発明の油中水型乳化組成物は、油相の構成脂肪酸組成において、ラウリン酸含量は5~22重量%が好ましく、より好ましくは7~22重量%であり、パルミチン酸含量は5~15重量%、より好ましくは8~12重量%であり、ステアリン酸含量は3~10重量%、より好ましくは4~7重量%であり、かつ、ステアリン酸/パルミチン酸の重量比が0.2~1であることが好ましい。各脂肪酸の量がこれらの範囲にあることで、乳化剤を用いずに、作業性の良好な油中水型乳化組成物を得ることができる。
なお脂肪酸組成は公知の方法、日本油化学協会基準油脂分析試験法(1996年版)2.4.1.2メチルエステル化法(三フッ化ホウ素メタノール法)の規定に準じて測定することができる。
(エステル交換油脂)
本発明には、ラウリン酸含量5~25重量%、パルミチン酸含量5~25重量%、ステアリン酸含量10~35重量%、ステアリン酸/パルミチン酸の重量比が0.5~7であるエステル交換油脂を使用することが好ましい。これを用いることにより、前述の物性及び組成を備える油中水型乳化組成物の調製が容易となる。
本発明のエステル交換油脂は例えば、ラウリン酸源としてラウリン系油脂を10~50重量%、パルミチン酸源としてパーム系油脂を0~75重量%、ステアリン酸源として、液状油脂の極度硬化油やステアリン酸に富む天然油脂を10~30重量%混合し、エステル交換を行うことで得ることができる。エステル交換はナトリウムメチラートなどの化学的触媒による方法でも、リパーゼなどの酵素による方法でもよく、また非選択的なランダム化反応であっても、位置特異性のある選択的なエステル交換反応であってもよいが、非選択的なランダム化反応であるのが好ましい。
本発明には、ラウリン酸含量5~25重量%、パルミチン酸含量5~25重量%、ステアリン酸含量10~35重量%、ステアリン酸/パルミチン酸の重量比が0.5~7であるエステル交換油脂を使用することが好ましい。これを用いることにより、前述の物性及び組成を備える油中水型乳化組成物の調製が容易となる。
本発明のエステル交換油脂は例えば、ラウリン酸源としてラウリン系油脂を10~50重量%、パルミチン酸源としてパーム系油脂を0~75重量%、ステアリン酸源として、液状油脂の極度硬化油やステアリン酸に富む天然油脂を10~30重量%混合し、エステル交換を行うことで得ることができる。エステル交換はナトリウムメチラートなどの化学的触媒による方法でも、リパーゼなどの酵素による方法でもよく、また非選択的なランダム化反応であっても、位置特異性のある選択的なエステル交換反応であってもよいが、非選択的なランダム化反応であるのが好ましい。
(植物乳)
本発明の油中水型乳化組成物は、水相中に植物乳成分を含有させることにより卵を混合可能な性質をさらに備える。植物乳としては豆乳、ココナッツミルク、アーモンドミルクなどが例示できるが、本発明においては大豆を原料とする豆乳類が好ましい。
通常の豆乳(脂質含量:無調整豆乳2.0%、調整豆乳3.6%、日本食品標準成分表2020年版(八訂))よりも脂質含量の高いものが特に好ましく、本発明においてはこれを「豆乳クリーム」と称する。
本発明の油中水型乳化組成物は、水相中に植物乳成分を含有させることにより卵を混合可能な性質をさらに備える。植物乳としては豆乳、ココナッツミルク、アーモンドミルクなどが例示できるが、本発明においては大豆を原料とする豆乳類が好ましい。
通常の豆乳(脂質含量:無調整豆乳2.0%、調整豆乳3.6%、日本食品標準成分表2020年版(八訂))よりも脂質含量の高いものが特に好ましく、本発明においてはこれを「豆乳クリーム」と称する。
(豆乳クリーム)
豆乳クリームの製法は限定されるものではないが、乾物中の脂質含量としては下限35重量%以上、より好ましくは40重量%以上である。また上限は75重量%以下、より好ましくは70重量%以下である。また乾物中の蛋白質含量は好ましくは15重量%以上、より好ましくは20重量%以上である。また上限は40重量%以下、より好ましくは35重量%以下である。脂質/蛋白質含量比は1以上が好ましく、より好ましくは1.2以上、さらに好ましくは1.5以上又は1.8以上である。
さらに、大豆蛋白質のうち「脂質親和性蛋白質」が濃縮されていることが好ましく、例えば特開2012-16348号公報に記載の大豆乳化組成物を使用することができる。該公報に記載のLCI値(Lipophilic Proteins Content Index)が50%以上、好ましくは55%以上の豆乳クリームを使用することがさらに好ましい。これらの性質を備える豆乳クリームとしては例えば不二製油(株)製の「濃久里夢」(登録商標)などを用いることができる。
豆乳クリームの製法は限定されるものではないが、乾物中の脂質含量としては下限35重量%以上、より好ましくは40重量%以上である。また上限は75重量%以下、より好ましくは70重量%以下である。また乾物中の蛋白質含量は好ましくは15重量%以上、より好ましくは20重量%以上である。また上限は40重量%以下、より好ましくは35重量%以下である。脂質/蛋白質含量比は1以上が好ましく、より好ましくは1.2以上、さらに好ましくは1.5以上又は1.8以上である。

前述の条件を満たせば、他には公知の油中水型乳化組成物ないしは可塑性油脂の配合、すなわち油脂及びその他原材料の配合を何れも使用することができる。油脂原料としては公知の食用油脂類をいずれも使用することができ、例えば、菜種油、大豆油、ヒマワリ種子油、綿実油、落花生油、米糠油、コーン油、サフラワー油、オリーブ油、カポック油、ゴマ油、月見草油、パーム油、シア脂、サル脂、カカオ脂、ヤシ油、パーム核油等の植物性油脂並びに乳脂、牛脂、ラード、魚油、鯨油等の動物性油脂が例示でき、上記油脂類の単独又は混合油或いはそれらの硬化、分別、エステル交換等を施した加工油脂が利用できる。
油中水型乳化組成物の製造法についても特に限定されないが、常法通り油相と水相とを予備乳化した後、コンビネーター、パーフェクター、ボテーターなどで急冷捏和することにより製造することができる。油相は、融解した油脂に必要に応じて色素、抗酸化剤、香料等の油溶性成分を添加、溶解及び/又は分散させ調製することができる。水相は水又は温水に水溶性の乳成分、必要に応じて食塩、糖類、無機塩類等を添加、溶解及び/又は分散させ調製することができる。本発明の効果を阻害しない範囲であれば各種乳化剤類を含有することもできる。
以下に実施例および比較例を記載し、本発明をより詳細に説明する。なお、文中「%」及び「部」は特に断りのない限り重量基準を意味する。
(エステル交換油脂の調製)
パーム油分別低融点部(沃素価:67.0)12.5部、パーム核油分別低融点部(沃素価:26.0)43.5部、パーム油の極度硬化油(沃素価:0.5以下)26.0部、菜種油18.0部混合し、触媒としてナトリウムメチラートを混合油に対して0.3%添加し、80℃、真空度20Torr、40分間非選択的エステル交換反応を行った後、水洗、脱水し、通常の精製工程を経てエステル交換油脂を得た。なお、得られたエステル交換油脂は、構成脂肪酸としてラウリン酸、パルミチン酸、ステアリン酸含量がそれぞれ19.5%、19.5%、22.0%であり、ステアリン酸/パルミチン酸の重量比が1.1であった。
パーム油分別低融点部(沃素価:67.0)12.5部、パーム核油分別低融点部(沃素価:26.0)43.5部、パーム油の極度硬化油(沃素価:0.5以下)26.0部、菜種油18.0部混合し、触媒としてナトリウムメチラートを混合油に対して0.3%添加し、80℃、真空度20Torr、40分間非選択的エステル交換反応を行った後、水洗、脱水し、通常の精製工程を経てエステル交換油脂を得た。なお、得られたエステル交換油脂は、構成脂肪酸としてラウリン酸、パルミチン酸、ステアリン酸含量がそれぞれ19.5%、19.5%、22.0%であり、ステアリン酸/パルミチン酸の重量比が1.1であった。
(油中水型乳化組成物の調製)
表1の配合に従い、油脂を約60~70℃にて融解混合し油相を調製した。続いてここに水を添加し、プロペラ攪拌器で攪拌、乳化、コンビネーターにて急冷混捏し油中水型乳化組成物 (1)~(5)を得た。
また別途、市販のバター及びマーガリンを準備した。これらの物性値を表2に、主要脂肪酸組成を表3に示す。
なお、硬さはレオメーター(株式会社レオテック、機種:RTC-3002D)を用い、プランジャー径(φ)10mm、進入速度5cm/minにて測定した。なおφ10mmでの測定値が2000gfを超えた場合はφ5mmに代えて測定し、換算値を記載した。
表1の配合に従い、油脂を約60~70℃にて融解混合し油相を調製した。続いてここに水を添加し、プロペラ攪拌器で攪拌、乳化、コンビネーターにて急冷混捏し油中水型乳化組成物 (1)~(5)を得た。
また別途、市販のバター及びマーガリンを準備した。これらの物性値を表2に、主要脂肪酸組成を表3に示す。
なお、硬さはレオメーター(株式会社レオテック、機種:RTC-3002D)を用い、プランジャー径(φ)10mm、進入速度5cm/minにて測定した。なおφ10mmでの測定値が2000gfを超えた場合はφ5mmに代えて測定し、換算値を記載した。
(検討1:15℃、20℃でのホイップテスト)
各サンプルを15℃、20℃にて1晩温調し、450gをホバートミキサー(ビーター)に投入し、2速でホイップし、5分ごとに比重を測定した。20分以内に比重0.5以下に達し、かつ離水の生じていないものを合格とした。結果を表3に示した。油中水型乳化組成物(1)~(3)はいずれの温度においても迅速な比重低下が認められ、乳化剤不使用でも作業性良好であることが確認された。なお、油中水型乳化組成物(4)(5)は20℃でのテストが不合格(離水あり)であったため、15℃でのテストは省略した。
各サンプルを15℃、20℃にて1晩温調し、450gをホバートミキサー(ビーター)に投入し、2速でホイップし、5分ごとに比重を測定した。20分以内に比重0.5以下に達し、かつ離水の生じていないものを合格とした。結果を表3に示した。油中水型乳化組成物(1)~(3)はいずれの温度においても迅速な比重低下が認められ、乳化剤不使用でも作業性良好であることが確認された。なお、油中水型乳化組成物(4)(5)は20℃でのテストが不合格(離水あり)であったため、15℃でのテストは省略した。
(検討2:10℃でのホイップテスト)
油中水型乳化組成物(3)、市販バター、市販マーガリンAを用い、10℃で1晩温調した後、検討1と同様にホイップテストを行った。結果を表5に示した。油中水型乳化組成物(3)は10℃においても迅速な比重低下が認められた。

(油中水型乳化組成物への植物乳配合)
油中水型乳化組成物(3)の配合中、水を豆乳類に置換して油中水型乳化組成物(6)、(7)を製造した。
なお、豆乳類としてはそれぞれ以下の市販品を用いた。
豆乳クリーム:「濃久里夢」不二製油(株)製、脂質12.3%
低脂肪豆乳:「美味豆乳」不二製油(株)製、脂質0.5%
油中水型乳化組成物(3)の配合中、水を豆乳類に置換して油中水型乳化組成物(6)、(7)を製造した。
なお、豆乳類としてはそれぞれ以下の市販品を用いた。
豆乳クリーム:「濃久里夢」不二製油(株)製、脂質12.3%
低脂肪豆乳:「美味豆乳」不二製油(株)製、脂質0.5%
(検討3:バターケーキ試作テスト)
品温20℃に調整した油中水型乳化組成物各300gを用い、ここに砂糖300gをミキサーで混合撹拌(2速、30秒)し、比重を測定した(卵添加前比重)。続いてミキサーで撹拌しながら、ここに溶き卵を50gずつ30秒おきに添加し(50g×6回、合計300g)、状態を観察した。ここに、予め合わせておいた薄力粉300gとベーキングパウダー6gを混合し、ミキサー1速30秒、続いて2速10秒混合し、得られた生地の最終比重を測定した。この生地をパウンドケーキ型に入れ(型のサイズ200×65×50mm)、オーブンで焼成した。(オーブン焼成条件:上火/下火=165℃/160℃、40分間)
放冷後、パウンドケーキの高さを測定した。なお、コントロールとしては市販マーガリンBを用いた。
品温20℃に調整した油中水型乳化組成物各300gを用い、ここに砂糖300gをミキサーで混合撹拌(2速、30秒)し、比重を測定した(卵添加前比重)。続いてミキサーで撹拌しながら、ここに溶き卵を50gずつ30秒おきに添加し(50g×6回、合計300g)、状態を観察した。ここに、予め合わせておいた薄力粉300gとベーキングパウダー6gを混合し、ミキサー1速30秒、続いて2速10秒混合し、得られた生地の最終比重を測定した。この生地をパウンドケーキ型に入れ(型のサイズ200×65×50mm)、オーブンで焼成した。(オーブン焼成条件:上火/下火=165℃/160℃、40分間)
放冷後、パウンドケーキの高さを測定した。なお、コントロールとしては市販マーガリンBを用いた。
水相に豆乳クリームを用いることでコントロールと同等のパウンドケーキが焼成でき、焼き菓子生地原材料としての利用適性を備えることが確認された。
Claims (7)
- 油相が下記すべての条件を満たすことを特徴とする、起泡用油中水型乳化組成物。
(a)上昇融点30℃以下
(b)20℃の硬さが500gf以下
(c)15℃硬さ/20℃硬さの比が3以上 - 該油相が下記すべての条件を満たす、請求項1に記載の油中水型乳化組成物。
(d)20℃でのSFC(固体脂含量)が1~20%
(e)15℃でのSFCが1~30% - 該油相の構成脂肪酸としてラウリン酸含量が5~22重量%、パルミチン酸含量が5~15重量%、ステアリン酸含量が3~10重量%、およびステアリン酸/パルミチン酸の重量比が0.2~1である、請求項1または2に記載の油中水型乳化組成物。
- 該油相に、構成脂肪酸としてラウリン酸含量が5~25重量%、パルミチン酸含量が5~25重量%、ステアリン酸含量が10~35重量%、およびステアリン酸/パルミチン酸の重量比が0.5~7であるエステル交換油を含有する、請求項1ないし3いずれか1項に記載の油中水型乳化組成物。
- 水相が植物乳を含有する、請求項1ないし4いずれか1項に記載の油中水型乳化組成物。
- 該油相に、構成脂肪酸としてラウリン酸含量が5~25重量%、パルミチン酸含量が5~25重量%、ステアリン酸含量が10~35重量%、およびステアリン酸/パルミチン酸の重量比が0.5~7であるエステル交換油を使用し、該油相の構成脂肪酸としてラウリン酸含量が5~22重量%、パルミチン酸含量が5~15重量%、ステアリン酸含量が3~10重量%、およびステアリン酸/パルミチン酸の重量比が0.2~1となるように配合する、請求項1ないし5いずれか1項に記載の油中水型乳化組成物の製造方法。
- 該油相に、構成脂肪酸としてラウリン酸含量が5~25重量%、パルミチン酸含量が5~25重量%、ステアリン酸含量が10~35重量%、およびステアリン酸/パルミチン酸の重量比が0.5~7であるエステル交換油を使用し、該油相の構成脂肪酸としてラウリン酸含量が5~22重量%、パルミチン酸含量が5~15重量%、ステアリン酸含量が3~10重量%、およびステアリン酸/パルミチン酸の重量比が0.2~1となるように配合する、乳化剤を配合せずに油中水型乳化組成物の作業性を改善する方法。
