Abstract

Cette composition de poudre pour pâte à frire est dispersée dans de l'eau pour pouvoir être utilisée et contient les constituants suivants : (A) de la farine ; (B) un amidon oxydé ; et (C) un amidon réticulé. Le rapport en masse ((B)/(C)) de la teneur du constituant (B) à la teneur du constituant (C) dans la composition de poudre est de 0,6 à 9. Le rapport en masse (((B) + (C))/amidons) de la quantité totale des constituants (B) et (C) à la quantité totale d'amidons dans la composition de poudre est de 0,68-1.
