随着生活水平的提高,人们的日常生活中越来越多的喜爱休闲食品和饮料等,人们对其口味和营养以及特殊的保健功能的要求也在逐渐升高,市场上的饮料、食品种类已经不能够满足人们的日常需求,高营养且具有一定的养生保健的食品、饮品越来越受到消费者的青睐。目前市场上的饮料种类繁多,如碳酸饮料、果汁、水果茶、花茶、咖啡、牛奶等,这些饮料因含有多种营养成份,具有不同的功能,而深受人们的喜爱,但是这些饮料的保健效果较差,不能有效满足人们高压生活下的保健需求。
中国专利申请CN 107279636 A公开了一种含辣木籽成分的保健饮料,它的成分包括辣木籽10-20份、甲壳素12份、乙酸1-2份、柠檬酸1-3份、甜菊糖苷0.1-0.5份、水300-1000份,它是将辣木籽榨油后的残渣与乙酸、柠檬酸、水在高压条件下封闭煎煮,过滤后加入甜菊糖苷、甲壳素搅拌均匀,其成品呈甜酸味,且对糖尿病患者有较好的降低血糖效果,此外还具有改善睡眠、清肠及促进新陈代谢功能等功效,在废料利用的同时,具有很好的保健效果。虽然该发明实现了废料利用但是该发明提由辣木籽废料供的保健饮料营养成分不足,且不易吸收。

针对以上问题,本发明提供了一种具有美白抗氧化护肝助睡眠作用的饮料及其制备方法。本发明提供的饮料含有梅子核混合物和石榴籽发酵粉组成的美白抗氧化剂,能够为人体提供多种所需营养物质,起到抗氧化美白作用;同时含有辣木籽和牛樟芝多肽组成的护肝助睡眠剂,在改善了辣木籽风味的同时使两种单一物质联合发挥作用,显著提高了护肝助睡眠的功效;并且添加有调理剂,提高了饮料的稳定性和口感,并且办发明提供的饮料营养成分能被快速吸收,保健效果明显。

与现有技术相比,本发明具有如下优点:
(1)本发明含有由梅子核混合物和石榴籽发酵粉组成的美白抗氧化剂,梅子核提取物中含有多种人体所需的氨基酸和矿物质,经发酵后能使其充分释放,同时石榴籽中含有丰富的果酸和维生素C,将两者的发酵物混合后能够为人体提供多种所需营养物质,并使营养物质充分分解,从而起到一个抗氧化美白作用。

所述梅子核混合物由以下方法制备:
(a)梅子果肉和果核分离,然后将梅肉搅碎成果泥,将所述果泥和果核一起放入容器中,加入蔗糖和葡萄酒酵母粉,搅拌,于29℃发酵6天后把果核和发酵液分离,得梅子发酵物A和发酵果核,所述蔗糖和果泥的质量比为3:10,所述葡萄酒酵母粉与果泥的质量比为2:9;
(b)向步骤(a)所得梅子发酵物A中加入醋酸菌粉,于28℃发酵4天,得梅子发酵物B,所述梅子发酵物A和醋酸菌粉的质量比为12:4;
(c)将步骤(a)所得发酵果核于39℃烘干,用超微破壁粉碎机粉碎,得大小为280目的发酵果核粉末,加入去离子水,于120w超声18min后800r/min离心,收集上清液,得梅子核提取物,所述发酵果核粉末与去离 子水的质量比为2:5;
(d)将步骤(c)所得梅子核提取物和步骤(b)所得梅子发酵物B混合均匀得混合物C,然后于35℃真空蒸发浓缩,得梅子核混合物,所述梅子核混合物的体积为混合物C体积的1/4。
所述石榴籽发酵粉由以下方法制备:
(Ⅰ)将石榴籽中加入蔗糖和乳酸菌粉,所述蔗糖的量为石榴籽粉质量的0.7倍,所述乳酸菌粉的量为石榴籽粉质量的0.5倍,于35℃发酵20小时,得石榴籽发酵物;

所述梅子核混合物由以下方法制备:

所述具有美白抗氧化护肝助睡眠作用的饮料的制备方法与实施例1类似,与实施例1的区别在于所述辣木籽粉为未经过处理的普通辣木籽粉。
试验例一饮料抗氧化试验
1、试验材料:实施例1、实施例2、实施例3、实施例4、对比例1、对比例2、制得的具有美白抗氧化护肝助睡眠作用的饮料。
2、试验方法:
ABTS清除能力测定,包括以下步骤:
(1)称ABTS粉末0.096g,用蒸馏水定容至25mL,称0.3784g过硫酸钾,用蒸馏水定容至10mL,量取5mL的ABTS溶液与88μL的过硫酸钾溶液混合均匀,在室温避光的条件下静置过夜,制成ABTS储备液;
(2)取实施例1-4和对比例1-2制得的饮料各0.1mL和无水乙醇按体积比1:50混合稀释,得样品液;
(3)分别取各样品液0.2mL,加入3mLABTS储备液,充分混合,室温放置10min用紫外分光光度计在734nm处测定吸光值At;ABTS溶液液 作空白吸光度为Ar,样品溶液吸光度为A0。计算ABTS清除率,ABTS自由基清除率(%)=[l-(At-A0)/Ar]×100。
DPPH清除能力测定,包括以下步骤:
(1)精确取0.0197g DPPH粉末,用无水乙醇定容至250mL,配制成0.2mmol/L的DPPH储备液,在517nm处测定吸光度A0,0℃保存;
(2)取实施例1-4和对比例1-2制得的饮料各0.2mL,与4mL醋酸缓冲溶液和3.8mL乙醇混合,得待测样品,测定在517nm处的吸光度A。;
(3)分别取各待测样品液0.5mL,加入2.5mL的DPPH储备液,在28℃恒温水浴锅中反应30min,用紫外分光光度计于517nm处测定吸光度为Ab,DPPH自由基的清除率=[A0-(A-Ab)]/A0。
3、试验结果:试验结果如表1所示。

从表1结果可以看出,与各对比例相比,各实施例抗氧化性能明显提高,并且实施例1中ABTS自由基清除率和DPPH自由基的清除率分别达到了100%和81%;将实施例与对比例1、对比例2相比可以看出,单一成分的梅子核混合物和石榴籽发酵粉都不能很好的起到抗氧化作用,但当两者联用时可以显著提高饮料的抗氧化性能,并且实施例1的抗氧化效果最好,为最佳实施例。
试验例二饮料助睡眠试验
1、实验材料:实施例1、实施例2、实施例3、实施例4、对比例3、对比例4制得的具有美白抗氧化护肝助睡眠作用的饮料。
2、实验方法:将90名中度睡眠困难的志愿者随机分成6组,每组15人,然后让志愿者分别在早晚各一次饮用实施例1、实施例2、实施例3、实施例4、对比例3、对比例4制得的具有美白抗氧化护肝助睡眠作用 的饮料,在第1、15、25、35天统计志愿者睡眠改善的人数。
3、试验结果:试验结果如表2所示。

从表2结果可以看出,与各对比例相比,各实施例睡眠改善性能明显提高,并且将实施例1与对比例3、对比例4相比可以看出,单一成分的牛樟芝多肽和辣木籽粉都不能很好的起到助睡眠作用,但当两者联用时可以显著提高饮料的助睡眠性能,并且实施例1的助睡眠效果最好。
试验例三饮料稳定性试验
1、实验材料:实施例1、实施例2、实施例3、实施例4、对比例5、对比例6制得的具有美白抗氧化护肝助睡眠作用的饮料。
2、实验方法:将实施例1、实施例2、实施例3、实施例4、对比例5、对比例6制得的具有美白抗氧化护肝助睡眠作用的饮料,各取10mL完全暴露在空气中,在第1、3、5、7天观察饮料的性状稳定性。
3、试验结果:试验结果如表3所示。

从表3结果可以看出,与各对比例相比,各实施例的稳定性明显改善,并且将实施例1与对比例5、对比例6相比可以看出,单一成分的硬脂酰乳酸钠和菊芋粉不能很好的起到改善稳定性的作用,但当两者联用时可以显著提高饮料的稳定性,并且实施例1的稳定性最好。
实施例四饮料口感测试
1、实验材料:实施例1、实施例2、实施例3、实施例4、对比例1、对比例2、对比例3、对比例4、对比例5、对比例6、对比例7制得的具有美白抗氧化护肝助睡眠作用的饮料。
2、实验方法:将110名志愿者随机分成11组,每组10人,然后让志愿者分别饮用实施例1、实施例2、实施例3、实施例4、对比例1-7制得的具有美白抗氧化护肝助睡眠作用的饮料,为饮料的口感打分,可分别记为1-10分,分值越高表示口感越好。
3、试验结果:试验结果如表4所示。

从表4结果可以看出,各实施例的得分都在8分以上,相比各实施例,对比例1-4的口感得分在7-8分,与实施例相差不是特别大,说明口感还可以;而对比例5-6的得分在6-7分,较实施例1-4和对比例1-4的得分都较低,说明含硬脂酰乳酸钠和菊芋粉的调理剂的添加可以改善饮料口感。实施例7的口感得分最低为5.2分,说明辣木籽粉的直接添加会影响饮料口感,本发明的处理方法能改善辣木籽的口感,并且实施例1的口感得分最高为9.1分。
实施例五护肝性能测试
1、试验材料:实施例1、实施例2、实施例3、实施例4、对比例3、对比例4制得的具有美白抗氧化护肝助睡眠作用的饮料。
2、试验方法:将30只小鼠随机分成6组,每组5只,分别设为实施例1组、实施例2组、实施例3组、实施例4组、对比例3组、对比例4组,实施例1-4组和对比例3组、对比例4组在喂养的普通饲料时分别喂 养对应的饮料,喂养20天,随后检测肝脏中的总胆固醇(TC)、甘油三酯(TG)、脂肪酸(FFA)、丙二醛(MDA)和超氧化物歧化酶(SOD)的浓度。
3、试验结果:试验结果如表5所示。

从表5中可以看出,与各实施例组相比,各对比例的TC、TG、FFA和MDA的值均比实施例组高,而SOD含量比各实施例组低,说明单一成分的牛樟芝多肽和辣木籽粉都不能很好的起到解肝毒、保护肝脏的功效,但当两者联用时可以显著提高饮料的解肝毒、保护肝脏的功效,并且实施例1的效果最好。
综合以上结果可以看出,本发明提供的具有美白抗氧化护肝助睡眠作用的饮料各项性能优良,且实施例1的各项性能最好,为最佳实施例。
Claims (10)
- 一种具有美白抗氧化护肝助睡眠作用的饮料,其特征在于,由以下组分及其质量份数组成:红枣3-5份,黑枸杞1-2份,蜂蜜3-5份,小蓟0.2-0.4份,生姜0.5-1份,酸樱桃浓缩粉1-3份,酸枣仁0.5-0.8份,燕窝0.08-0.1份,美白抗氧化剂2-4份,护肝助睡眠剂0.7-0.9份,木糖醇3-5份,调理剂2-4份,香精0.3-0.5份,水85-92份;所述美白抗氧化剂由梅子核混合物和石榴籽发酵粉按质量比2-3:11-14组成;所述护肝助睡眠剂由牛樟芝多肽和辣木籽粉按质量比1-2:7-9组成;所述调理剂由硬脂酰乳酸钠和菊芋粉按质量比2:7-11组成。
- 根据权利要求1所述的一种具有美白抗氧化护肝助睡眠作用的饮料,其特征在于,由以下组分及其质量份数组成:红枣4份,黑枸杞1份,蜂蜜4份,小蓟0.3份,生姜0.6份,酸樱桃浓缩粉2份,酸枣仁0.7份,燕窝0.09份,美白抗氧化剂3份,护肝助睡眠剂0.8份,木糖醇4份,调理剂3份,香精0.4份,水89份;所述美白抗氧化剂由梅子核混合物和石榴籽发酵粉按质量比3:13组成;所述护肝助睡眠剂由牛樟芝多肽和辣木籽粉按质量比1:8组成;所述调理剂由硬脂酰乳酸钠和菊芋粉按质量比2:9组成。
- 根据权利要求1或2所述的一种具有美白抗氧化护肝助睡眠作用的饮料,其特征在于,所述梅子核混合物由以下方法制备:(a)梅子果肉和果核分离,然后将梅肉搅碎成果泥,将所述果泥和果核一起放入容器中,加入蔗糖和葡萄酒酵母粉,搅拌,于28-30℃发酵5-6天后把果核和发酵液分离,得梅子发酵物A和发酵果核;(b)向步骤(a)所得梅子发酵物A中加入醋酸菌粉,于27-29℃发酵3-5天,得梅子发酵物B;(c)将步骤(a)所得发酵果核于38-40℃烘干,用超微破壁粉碎机粉碎,得大小为200-300目的发酵果核粉末,加入去离子水,于120w超声15-20min后700-1000r/min离心,收集上清液,得梅子核提取物;(d)将步骤(c)所得梅子核提取物和步骤(b)所得梅子发酵物B混合均匀 得混合物C,将所得混合物C于34-37℃真空蒸发浓缩,得梅子核混合物,所述梅子核混合物的体积为混合物C体积的1/5-1/3。
- 根据权利要求3所述的一种具有美白抗氧化护肝助睡眠作用的饮料,其特征在于,所述步骤(a)中所述蔗糖和果泥的质量比为3-4:10,所述葡萄酒酵母粉与果泥的质量比为1-2:9。
- 根据权利要求3所述的一种具有美白抗氧化护肝助睡眠作用的饮料,其特征在于,所述步骤(b)中所述梅子发酵物A和醋酸菌粉的质量比为12:3-5。
- 根据权利要求3所述的一种具有美白抗氧化护肝助睡眠作用的饮料,其特征在于,所述步骤(c)中所述发酵果核粉末与去离子水的质量比为2:3-6。
- 根据权利要求1或2所述的一种具有美白抗氧化护肝助睡眠作用的饮料,其特征在于,所述石榴籽发酵粉由以下方法制备:(Ⅰ)将石榴籽中加入蔗糖和乳酸菌粉,所述蔗糖的量为石榴籽粉质量的0.5-0.8倍,所述乳酸菌粉的量为石榴籽粉质量的0.4-0.6倍,于33-37℃发酵18-24小时,得石榴籽发酵物;(Ⅱ)将步骤(Ⅰ)所得石榴籽发酵物真空蒸发干燥,用超微粉碎机粉碎成大小为200-300目的粉末,得石榴籽发酵粉。
- 根据权利要求1或2所述的一种具有美白抗氧化护肝助睡眠作用的饮料,其特征在于,所述辣木籽粉由以下方法制备:将辣木籽于120kPa气压下破碎后与蜂蜜混合,然后于40-50℃烘干后磨成大小为200-300目的粉末,得辣木籽粉。
- 根据权利要求1或2所述的一种具有美白抗氧化护肝助睡眠作用的饮料,其特征在于,所述菊芋粉由以下方法制备:将菊芋去皮切块后放于蒸笼内100℃蒸30-50min,然后于40-60℃烘干,利用超微粉碎机粉碎成大小200-300目的粉末,得菊芋粉。
- 根据权利要求1-9任一项所述的一种具有美白抗氧化护肝助睡眠作用的饮料的制备方法,其特征在于,包括以下步骤:(i)将生姜洗净、研磨成姜泥后压榨取汁液,得姜汁;(ii)将燕窝用38℃温水浸泡5-7h后捞出洗净,再于28-30℃烘干,利用超微粉碎机粉碎成大小200-300目的粉末,然后加水煮1-2小时,加入水的质量为燕窝质量的1-1.5倍,得燕窝浆;(iii)将红枣、黑枸杞、小蓟、酸枣仁于40-50℃烘干,用超微粉碎机粉碎,得混合粉A;(iv)向调理剂中加入1/2量的水,50-70r/min搅拌15-30min后加入步骤(i)所得姜汁、步骤(ii)所得燕窝浆和步骤(iii)所得混合粉A,60-80r/min搅拌10-15min,得饮料组分A;(v)向剩余量的水中加入美白抗氧化剂、护肝助睡眠剂、酸樱桃浓缩粉和木糖醇,60-80r/min搅拌10-15min,然后加入蜂蜜和香精,60-80r/min搅拌15-25min,得饮料组分B;(vi)将步骤(iv)所得饮料组分A和步骤(v)所得饮料组分B混合,60-80r/min搅拌10-15min,即得。
