特許文献1には、骨付き腿肉の脱骨工程において、大腿骨の骨頭に付着した肉部を骨部から最終分離する工程を自動化した装置が開示されている。この自動化装置は、クランパで把持した骨付き腿肉をY型誘導ガイドが形成するY形のガイド空間に導き、該ガイド空間の下流側端に設けられたカッタで大腿骨骨頭から肉部を切断している。
また、大腿骨骨頭付近には商品価値のあるオイスタミートが付着しており、オイスタミートが大腿骨から分離されず、大腿骨に残ってしまうという問題がある。
骨付き肢肉の胴体側端部骨頭に付着した肉部を分離するための骨付き肢肉の骨肉分離装置であって、

ここで、「骨付き肢肉」とは、食鳥屠体及び家畜屠体の前肢及び後肢を含む。また、「胴体側端部骨頭」とは、骨付き肢肉の胴体付け根部において、胴体側の骨部に接続する骨付き肢肉側の骨部の骨頭を言う。

前記カッタは前記ガイド部の下方で前記ガイド部に隣接して配置される。
上記(2)の構成によれば、骨付き肢肉の胴体側端部骨頭がガイド空間の下流側端でガイド部の上面に乗り上げたとき、ガイド部の下方でガイド部に隣接して配置されるカッタは、胴体側端部骨頭と胴体側端部骨頭に付着した肉部との間の高さに位置することができる。そのため、カッタによって胴体側端部骨頭と肉部との間の所定部位を正確に切断でき、切断された肉部の歩留まりを向上できる。

上記(4)の構成によれば、肉部の切断後、ガイド部材の一方とカッタとを同時に退避させることができるので、クランプ部に把持された骨部や骨部から分離された肉部がガイド空間の下流側端で詰まったり、あるいは骨部の下流側への搬送が妨げられたりすることを効果的に抑制できる。
前記ガイド部は、

上記(10)の構成によれば、複数の把持部の各々はクランプ部と共に移動しながらカッタによる肉部の切断時に肉部を把持するため、該把持部の一対の把持部材は開閉動作を行う必要がない。従って、最終分離工程の所要時間を短縮でき、処理能力を高めることができる。さらに、一対の把持部材を軸中心に搬送方向にそって回動動作させるための上記第1エアシリンダを含む駆動部が不要になる。
前記カッタによる前記肉部の切断時に前記把持部を前記クランプ部から離れる方向へ移動させる第2駆動部を備える。
上記(11)の構成によれば、上記第2駆動部を備えることで、肉部の切断時に骨付き肢肉に引張力を付与できるため、切断時に骨付き肢肉をガイド部に安定して支持させ、所定位置に位置決めできる。これによって、胴体側端部骨頭と肉部との間を正確に切断できるため、回収可能な肉部の歩留まりをさらに向上できる。

一対の把持部材24a及び24bを骨付き肢肉Mbの搬送方向と同一方向へ同時に移動させながら、カッタ16による切断時に一対の把持部材24a及び24bを把持位置に動作させて肉部mを把持する。これによって、骨付き肢肉Mbの揺動や位置ずれを抑制して所定の切断位置に安定して位置決めできるため、骨部bから分離回収される肉部mの歩留まりを向上できる。また、肉部mの切断後に一対の把持部材24a及び24bを把持解除位置に動作させ、その後、骨付き肢肉Mbの搬送方向上流側の把持位置に戻すことができるので、1台の把持部18(18a)で複数の骨付き肢肉Mbの切断に対応できる。
例えば、搬送方向上流側の回動始点で肉部mを把持し、その状態で骨付き肢肉Mbの移動に同期して搬送方向下流側に回動し、カッタ16による肉部mの切断後、回動終点で一対の把持部材24a及び24bを把持解除位置に切り替えると共に、一対の把持部材24a及び24bを回動始点に戻す動作を繰り返すようにする。
一実施形態では、軸28は基部50に支持され、第1エアシリンダ32は基部52に支持される。

を含むことを特徴とする請求項1乃至4の何れか一項に記載の骨付き肢肉の骨肉分離装置。 - 前記カッタは、前記ガイド棒及び前記ガイド板の下方で前記ガイド棒及び前記ガイド板に隣接して水平方向に沿って配置され、円弧状の刃先を有する板状刃体で構成されることを特徴とする請求項5に記載の骨付き肢肉の骨肉分離装置。
- 前記把持部は、前記肉部を両側から把持するように構成された一対の把持部材を備えることを特徴とする請求項1乃至6の何れか一項に記載の骨付き肢肉の骨肉分離装置。
- 前記一対の把持部材を軸中心に前記骨付き肢肉の搬送方向に沿って同一回転角で回動させると共に、前記肉部を把持する把持位置と把持解除位置とに動作させる第1駆動部を備えることを特徴とする請求項7に記載の骨付き肢肉の骨肉分離装置。
- 前記第1駆動部は、
軸中心に回動可能なアームと、
前記アームの一端側に接続された第1エアシリンダと、
前記アームの他端側に取り付けられた支持フレームと、
前記支持フレームに回動可能に取り付けられ、前記一対の把持部材の各々が取り付けられた一対の回動軸と、
前記一対の回動軸の各々に取り付けられ、互いに噛み合う一対の歯車と、
前記一対の把持部材を前記一対の回動軸を中心に前記把持位置及び前記把持解除位置に回動させる第2エアシリンダと、
を備えることを特徴とする請求項8に記載の骨付き肢肉の骨肉分離装置。 - 前記複数のクランプ部の各々に対応して複数の把持部を備え、
前記複数の把持部の各々は、前記クランプ部の移動と同期して前記搬送経路に沿って移動するように構成されることを特徴とする請求項7に記載の骨付き肢肉の骨肉分離装置。 - 前記カッタによる前記肉部の切断時に前記把持部を前記クランプ部から離れる方向へ移動させる第2駆動部を備えることを特徴とする請求項10に記載の骨付き肢肉の骨肉分離装置。
- 前記一対の把持部材の間に設けられ、前記胴体側端部骨頭から切断された前記肉部を受けるシュートを備えることを特徴とする請求項8乃至11の何れか一項に記載の骨付き肢肉の骨肉分離装置。
- 骨付き肢肉の胴体側端部骨頭に付着した肉部を分離するための骨付き肢肉の分離方法であって、
前記骨付き肢肉を複数のクランプ部によって把持し、搬送経路に沿って搬送する搬送ステップと、
ガイド部によって形成されるガイド空間であって、前記骨付き肢肉の搬送方向上流側に開放端が向けられたV形のガイド空間に前記骨付き肢肉を案内する案内ステップと、
前記ガイド空間の前記搬送方向の下流側端に設けられたカッタで、前記ガイド空間に案内された前記骨付き肢肉の前記胴体側端部骨頭から前記肉部を切断する肉部切断ステップと、
前記カッタによる前記肉部の切断時に、前記肉部を把持部によって把持して前記肉部の揺動を抑える肉部把持ステップと、
を含むことを特徴とする骨付き肢肉の骨肉分離方法。 - 前記肉部把持ステップにおいて、前記把持部によって前記肉部に前記胴体側端部骨頭から離れる方向へ引張力を付加する引張力付与ステップをさらに含むことを特徴とする請求項13に記載の骨付き肢肉の骨肉分離方法。
