Abstract
Description
本発明の実施の形態は、カテキン類の含有量(A)が特定の範囲内にあり、RebDおよび/またはRebMを含み、その合計含有量(B)が特定の範囲内にある飲料であって、B/Aの比が2.9以上の飲料である。
以下、本発明の実施形態を具体例に基づいて説明するが、本発明の実施形態はこれらに限定されるものではない。なお、本明細書において、特に記載がない限り、%や部は重量基準であり、数値範囲はその端点を含むものとして記載される。
下記の表に示す処方で容器詰飲料を調製し、飲料の香味について官能評価を行った。すなわち、茶抽出物由来のカテキン製剤(サンフェノン、太陽化学社製)を用いて種々のカテキン濃度の溶液を準備し、そこにRebDを配合してサンプル飲料を調製し、容器に充填した。なお、使用したカテキン製剤は、茶(カメリアシネンシス)の抽出物由来のものであり、カテキン類の含有量に占めるガロカテキンガレート及びエピガロカテキンガレートの合計量の割合は約60%である。
「好ましい甘み」:500mlの飲料を飽きなく飲めるような心地よい甘みという観点で評価した(2点:好ましい、1点:あまり好ましくない)。
「後を引く甘味のマスキング効果」:500mlの飲料において、RebDおよび/またはRebMに特有の口中に残り後引く甘味を緩和出来ているか、という観点で評価した(2点:効果がある、1点:効果があまり感じられない)。
Claims (4)
- カテキン類の含有量(A)が1~166ppm、RebDおよび/またはRebMの合計の含有量(B)が20~500ppmであり、B/Aが2.9以上である飲料。
- カテキン類が、茶抽出物由来である、請求項1に記載の飲料。
- 茶抽出物が、カメリアシネンシス由来である、請求項2に記載の飲料。
- カロリーが20kcal/100ml以下である、請求項1~3のいずれかに記載の飲料。
