Abstract
Description
本発明の実施の形態は、茶重合ポリフェノールの含有量が特定の範囲内にあり、RebD及び/又はRebMを含有し、その合計含有量が特定の範囲内にあり、茶重合ポリフェノールの含有量に対する、RebD及びRebMの合計含有量の重量比が特定の範囲内にある飲料である。
・カラム:TSK-gel ODS-80TsQA(4.6mmφx150mm、東ソー株式会社)
・移動相:A:水:アセトニトリル:トリフルオロ酢酸=900:100:0.5
B:水:アセトニトリル:トリフルオロ酢酸=200:800:0.5
・流速:1.0ml/min
・カラム温度:40℃
・グラディエント条件:分析開始から5分後まではB液0%、
5分から11分まではB液8%、
11分から21分までB液10%、
21分から22分まででB液100%、
22分から30分まで100%保持、
30分から31分までで0%
・検出:A280nm (データ採取時間は30分)、ピーク面積で定量。
・注入量:10μL
・標準物質:ウーロンホモビスフラバンB(略記:OHBF-B)
茶重合ポリフェノールの量は、標準物質としてOHBF−Bを用い、検量線を作成することにより求められる。なお、標準物質であるOHBF−Bは、例えば、Chem. Pharm. Bull 37(12), 3255-3563(1989) に記載の方法や、特開2005−336117号公報(実施例3)に記載の方法に従って合成したもの(好ましくは純度98%以上の純度まで精製したもの)、茶葉より単離したものなどを用いることができる。
本発明の実施形態の別の側面によれば、飲料の製造方法が提供される。本発明の実施形態の製造方法は、飲料中の茶重合ポリフェノールの含有量が5〜150ppmとなり、RebD及びRebMの合計含有量が20〜300ppmとなり、茶重合ポリフェノールの含有量(A)に対する、RebD及びRebMの合計含有量(B)の重量比(B/A)が1.0〜9.0となるように、茶重合ポリフェノールとRebD及び/又はRebMとを配合する工程を含むものである。茶重合ポリフェノールの配合方法は特に限定されず、例えば、茶重合ポリフェノール自体を配合してもよく、茶重合ポリフェノールを含有する原料などを配合してもよい。また、RebD及び/又はRebMの配合方法も特に限定されず、RebD及び/又はRebM自体を配合してもよく、RebD及び/又はRebMを含有する原料を配合してもよい。なお、茶重合ポリフェノールの種類や好ましい含有量範囲、RebD及びRebMの好ましい合計含有量範囲、重量比(B/A)の好ましい範囲などについては飲料に関して上記した通りである。

各サンプル飲料の茶重合ポリフェノール含有量とRebD含有量、及び官能評価の結果を図1に示す。図1に記載の通り、茶重合ポリフェノール含有量及びRebD含有量を本発明の範囲内に調整し、かつRebD含有量/茶重合ポリフェノール含有量重量比を本発明の範囲内に調整することで、茶様の香味を維持しつつ、茶重合ポリフェノールの苦渋味をマスキングできることが示された。
Claims (3)
- 茶重合ポリフェノールの含有量が5〜150ppmであり、
RebD及び/又はRebMを含有し、その合計含有量が20〜300ppmであり、
茶重合ポリフェノールの含有量(A)に対する、RebD及びRebMの合計含有量(B)の重量比(B/A)が1.0〜9.0である、飲料。 - 茶重合ポリフェノールの含有量(A)に対する、RebD及びRebMの合計含有量(B)の重量比(B/A)が2.0〜5.0である、請求項1に記載の飲料。
- さらに非重合カテキンを含み、前記茶重合ポリフェノールの含有量の、前記非重合カテキンの含有量に対する重量比(茶重合ポリフェノール含有量/非重合カテキン含有量)が1以上である、請求項1又は2に記載の飲料。
