Abstract
Description
本発明の実施の形態は、カテキン類の含有量が特定の範囲内にあり、RebD及び/又はRebMを含み、その合計含有量が特定の範囲内にあり、カテキン類の含有量(A)に対する、RebD及びRebMの合計含有量(B)の重量比(B/A)が特定の範囲内にある飲料である。
本発明の実施形態の別の側面によれば、飲料の製造方法が提供される。本発明の実施形態の製造方法は、飲料中のカテキン類の含有量が1〜600ppmとなり、RebD及びRebMの合計含有量が20〜300ppmとなり、カテキン類の含有量(A)に対する、RebD及びRebMの合計含有量(B)の重量比(B/A)が0.43〜3.00となるように、カテキン類とRebD及び/又はRebMとを配合する工程を含むものである。カテキン類の配合方法は特に限定されず、例えば、カテキン類自体を配合してもよく、カテキン類を含有する原料などを配合してもよい。また、RebD及び/又はRebMの配合方法も特に限定されず、RebD及び/又はRebM自体を配合してもよく、RebD及び/又はRebMを含有する原料を配合してもよい。なお、カテキン類の種類や好ましい含有量範囲、RebD及びRebMの好ましい合計含有量範囲、重量比(B/A)の好ましい範囲などについては飲料に関して上記した通りである。

各サンプル飲料のカテキン類含有量とRebD含有量、及び官能評価の結果を図1に示す。図1に記載の通り、カテキン類含有量及びRebD含有量を本発明の範囲内に調整し、かつRebD含有量/カテキン類含有量重量比を本発明の範囲内に調整することで、茶様の香味を維持しつつ、カテキン類の苦渋味をマスキングできることが示された。
