Abstract
Procedimiento para obtener aceite de oliva que comprende las etapas de a) triturar mecánicamente las aceitunas enteras, con o sin hueso, hasta obtener una pasta de aceitunas, b) liofilizar la pasta de la etapa a) para reducir su contenido en agua, y c) extraer el aceite de la pasta liofilizada de la etapa b). Máquina (1) para obtener aceite de oliva mediante el procedimiento reivindicado, que comprende una cavidad (4) para recibir pasta de aceitunas o para recibir un envase que contiene pasta de aceitunas, y se caracteriza por el hecho de que comprende; una unidad (2) de mezcla o batido que comprende una pala (6) para batir la pasta liofilizada y medios (7,8,9) para proporcionar agua en el interior de dicha cavidad (4) o envase, y una unidad (3) de prensado y/o centrifugado de la pasta batida. Pasta de aceitunas caracterizada por el hecho de que ha sido liofilizada después de ser triturada para reducir su contenido en agua.
