Abstract
The present invention provides a method of extraction of pectin from banana peels, comprising the steps of - extracting the banana peels by water in subcritical state, - precipitating the extract with C1-C4 alcohol, and - removing the alcohol, thus obtaining pectin. The process of the invention allows to obtain a good quality pectin through a process which is commercially viable and environmentally friendly, thus providing a viable alternative to the commercial apple and citrus pectins. The product does not contain hazardous residues of organic solvents or strong acids which would prevent human or animal consumption. Another advantage is that the process enables the use of a large amount of waste product which is abundant in Malaysia, this may encourage the utilization of the waste banana peels for production of natural pecting product.
