特開2003-102420号公報には、香味野菜、トマト、香辛料、きのこから選ばれる野菜エキスが、澱粉や魚肉特有の臭みの低減に優れた効果を発揮することが記載されている。しかしながら、加工食品に対する添加量が0.02~10wt%と多く、また、その効果についても澱粉や魚肉特有の臭みを低減するという効果であって、香気を増強するということについて言及されていない。
特開平6-339364号公報には、レトルト食品に対して、0.1~10wt%の風味油(スパイス、野菜、調味料)を添加することにより不快なレトルト臭を低減することが出来ることが記載されている。しかしながら、食品に対する風味油の添加量が多く、また、レトルト臭の除去が対象であり、香気の増強については言及されていない。さらに、γ-アミノ酪酸、ナリンゲニンについても言及されていない。
また、本発明は、γ-アミノ酪酸及びナリンゲニンを香料組成物に添加することを含む、香料組成物の香気強度及び/または香質向上方法を提供する。
また、本発明は、上記香気強度及び/または香質向上剤を含む、又は上記方法により香気強度及び/または香質の向上した、香料組成物を提供する。
また、本発明は、上記香料組成物を飲食品、医薬品またはオーラルケア製品に添加する工程を含む、飲食品、医薬品またはオーラルケア製品の香気強度及び/または香質向上方法を提供する。
また、本発明は、上記香料組成物を含む、飲食品、医薬品またはオーラルケア製品を提供する。
また、γ-アミノ酪酸及びナリンゲニンは任意の形態で添加することが可能であり、例えば化合物単品として添加してもよいし、又は両成分を含む天然抽出物、例えば動植物処理物の状態で添加してもよい。動植物処理物は、それ自身が特徴的な香りを有する場合には、蒸留、吸着剤処理、溶剤抽出等の手法により、動植物自身が有する香りを低減して使用することが望ましい。
限定を意図するものではないが、飲食品としては、果物ジュース、野菜系飲料、炭酸飲料、スポーツドリンク、コーヒー飲料、お茶、紅茶、ヨーグルト飲料、乳酸菌飲料、栄養ドリンク、スープ、麺つゆ等の液体製品、キャンディー、ガム、グミ、ゼリー、チョコレート、クッキー、アイスクリーム、ハム、ソーセージ、スナック等の固体製品、カレー、シチュー、ハヤシライス、ソース、タレ、ドレッシング、生クリーム等の半固体・流動性製品が挙げられる。医薬品としては、香料組成物と併用されるものであれば特に限定されない。また、オーラルケア製品としては、歯磨き粉、練り歯磨き、液体歯磨き、洗口液等が挙げられる。
酸味料としては、酢酸、乳酸、クエン酸等が挙げられる。
増量剤としては、糖類、多糖類、加工澱粉、カゼイン、ゼラチン、カルボキシメチルセルロース、レシチン等が挙げられる。
公知の風味改善素材としては、例えば、スクラロース、サイクロデキストリン、テアニン、ヘスペリジン配糖体、サトウキビ抽出物等が挙げられる。
具体的な化合物及び精油としては、アセトアルデヒド、アセト酢酸エチル、アセトフェノン、アニスアルデヒド、アミルアルコール、α-アミルシンナムアルデヒド、アントラニル酸メチル、イオノン、イソアミルアルコール、イソオイゲノール、イソ吉草酸イソアミル、イソ吉草酸エチル、イソチオシアネート類、イソチオシアン酸アリル、イソバレルアルデヒド、イソブタノール、イソブチルアルデヒド、イソプロパノール、イソペンチルアミン、インドール及びその誘導体、γ-ウンデカラクトン、2-エチル-3,5-ジメチルピラジン及び2-エチル-3,6-ジメチルピラジンの混合物、エチルバニリン、2-エチルピラジン、2-エチル-3-メチルピラジン、2-エチル-5-メチルピラジン、5-エチル-2-メチルピラジン、オイゲノール、オクタナール、オクタン酸エチル、ギ酸イソアミル、ギ酸ゲラニル、ギ酸シトロネリル、ケイ皮酸、ケイ皮酸エチル、ケイ皮酸メチル、ケトン類、ゲラニオール、酢酸イソアミル、酢酸エチル、酢酸ゲラニル、酢酸シクロヘキシル、酢酸シトロネリル、酢酸シンナミル、酢酸テルピニル、酢酸フェネチル、酢酸ブチル、酢酸ベンジル、酢酸l-メンチル、酢酸リナリル、サリチル酸メチル、2,3-ジエチル-5-メチルピラジン、シクロヘキシルプロピオン酸アリル、シトラール、シトロネラール、シトロネロール、1,8-シネオール、2,3-ジメチルピラジン、2,5-ジメチルピラジン、2,6-ジメチルピラジン、2,6-ジメチルピリジン、シンナミルアルコール、シンナムアルデヒド、デカナール、デカノール、デカン酸エチル、5,6,7,8-テトラヒドロキノキサリン、2,3,5,6-テトラメチルピラジン、テルピネオール、2,3,5-トリメチルピラジン、γ-ノナラクトン、バニリン、パラメチルアセトフェノン、バレルアルデヒド、ヒドロキシシトロネラール、ヒドロキシシトロネラールジメチルアセタール、ピペリジン、ピペロナールピラジン、ピロリジン、フェニル酢酸イソアミル、フェニル酢酸イソブチル、フェニル酢酸エチル、2-(3-フェニルプロピル)ピリジン、フェネチルアミン、ブタノール、ブチルアミン、ブチルアルデヒド、フルフラール及びその誘導体、プロパノール、プロピオンアルデヒド、プロピオン酸、プロピオン酸イソアミル、プロピオン酸エチル、プロピオン酸ベンジル、ヘキサン酸、ヘキサン酸アリル、ヘキサン酸エチル、ヘプタン酸エチル、ペリルアルデヒド、ベンジルアルコール、ベンズアルデヒド、2-ペンタノール、1-ペンテン-3-オール、d-ボルネオール、マルトール、N-メチルアントラニル酸メチル、5-メチルキノキサリン、6-メチルキノリン、5-メチル-6,7-ジヒドロ-5H-シクロペンタピラジン、メチル β-ナフチルケトン、2-メチルピラジン、2-メチルブタノール、3-メチル-2-ブタノール、2-メチルブチルアルデヒド、3-メチル-2-ブテナール、3-メチル-2-ブテノール、l-メントール等のメントール各異性体、酪酸、酪酸イソアミル、酪酸エチル、酪酸シクロヘキシル、酪酸ブチル、リナロール、アニス油、アニススター油、ベルガモット油、メボウキ油、月桂樹葉ウエストインデアン油、ガルバナム油、リンゴ油、アプリコット油、カッシア油、クスノキ剤油、ブチュ葉油、カルダモン種子油、カッシア樹皮油、クモミル花ローマン油、シナモン樹皮油、肉桂葉油、チョウジ蕾み油、コニャックグリーン油、コエンドロ油、クベバ油、ヒメウイキョウ油、ウイキョウ甘油、ニンニク油、ショウガ油、ペチグレイン油、レモン油、ライムオイル、オレンジ油、柑橘油、杉剤油、クスノキ剤油、シトロネラ油、パッチュリ油、ユーカリ油、ベイ油、グレープフルーツ油、マンダリン油、白檀油、杜松実油、ローズ油、イラン油、タンジェリン油、ゼラニウム油、リモネン、薄荷油、西洋薄荷(ペパーミント)油、などが挙げられる。
1) ナリンゲニン
検体をそのまま、もしくは水で希釈して0.1~100w/v%水溶液を調整し、以下の条件で分析を実施。
測定装置: 高速液体クロマトグラフ(Agilent社製)
カラム: Cosmosil 5C18-AR-II 4.6x150mm(ナカライテスク社製)
カラム温度: 40℃
移動相: A;アセトニトリル、B;水
A/B=10/90(0min)→10/90(5min)→30/70(15min)→30/70(30min)
流速: 0.8ml/min
検出器: 紫外線吸光光度計(Agilent社製)
検出波長: 210nm
検体をそのまま、もしくは水で希釈して0.1~100w/v%水溶液を調整し、以下の条件で分析を実施。
(分析方法:OPAアミノ酸定量法)
カラム: Cadenza CD-C18 4.6x150mm(Imtakt社製)
カラム温度: 40℃
移動相: A;40mM リン酸2水素ナトリウム(pH 7.8)、
B;アセトニトリル/メタノール/水 = 45/45/10
グラジエント A/B = 100/0(0min)→100/0(7min)→80/20(18min)→80/20(20min)→55/45(33.6min)→0/100(35min)→0/100(45min)
流速: 1.0ml/min
検出器: 蛍光検出器(Agilent社製)
検出波長: 励起波長 340nm、蛍光波長 450nm
官能評価人数: 12名
官能評価結果:
各項目について向上を感じると評価した人数を下表に示した。
以下の実験例の官能評価についても同様に、評価生地に対してフレーバーのみ添加した飲食品を比較対象とし、それに対して実施例及び比較例の香料組成物を評価生地に添加した飲食品を摂取した際に、香気強度の向上、香質の向上を感じるか否か、またその飲食品に対して嗜好性の向上を感じるか否か、を評価した。評価する実施例及び比較例の香料組成物を添加した飲食品は、中身がわからないように評価者に提示した。
官能評価人数: 10名
官能評価結果:
各項目について向上を感じると評価した人数を下表に示した。
バニラフレーバーに対し、トマト汁処理物Aを0.1%添加したものを実施例3-1の香料組成物、0.001%添加したものを実施例3-2の香料組成物、何も添加しないものを比較例3の香料組成物として調製した。フレーバー中のγ-アミノ酪酸、ナリンゲニンの含量は下表の通りであった。

官能評価の結果、アップルフレーバーに所定量のγ-アミノ酪酸、ナリンゲニンを添加することにより、香気強度の向上や香質の向上を認めた。またそれにより、風味付けした水の嗜好性が向上するという評価を得た。

Claims (9)
- γ-アミノ酪酸及びナリンゲニンを含む、香料組成物の香気強度及び/または香質向上剤。
- γ-アミノ酪酸とナリンゲニンの重量比が、1:10000~100000:1である、請求項1に記載の香気強度及び/または香質向上剤。
- γ-アミノ酪酸及びナリンゲニンがトマト処理物由来である、請求項1又は2に記載の香気強度及び/または香質向上剤。
- γ-アミノ酪酸及びナリンゲニンを香料組成物に添加することを含む、香料組成物の香気強度及び/または香質向上方法。
- γ-アミノ酪酸とナリンゲニンの重量比が1:10000~100000:1となるようにγ-アミノ酪酸及びナリンゲニンを香料組成物に添加する、請求項4に記載の方法。
- 請求項1~3のいずれか1項に記載の香気強度及び/または香質向上剤を含む、又は請求項4又は5に記載の方法により香気強度及び/または香質の向上した、香料組成物。
- γ-アミノ酪酸を0.1~10000ppm、ナリンゲニンを0.01~10000ppm含む、請求項6に記載の香料組成物。
- 請求項6又は7に記載の香料組成物を飲食品、医薬品またはオーラルケア製品に添加する工程を含む、飲食品、医薬品またはオーラルケア製品の香気強度及び/または香質向上方法。
- 請求項6又は7に記載の香料組成物を含む、飲食品、医薬品またはオーラルケア製品。
