そのため流通時等の摩耗で凸部が削れてしまったり、高温時の耐熱保形性を付与することができないなど不具合を生じる。またチョコレート等配合や製法の制限により、意図せず製品表面が微細な粗面となることがあり、従来のシェラック塗布量では製品表面に充分な光沢を得ることが出来なかった。

油性菓子の製造
カカオマス20重量部、砂糖50重量部、全粉乳20重量部、ココアバター10重量部、レシチン0.5重量部をミキサーにて混合後、チョコレート製造の常法通りレファイナーロールにより粉砕し、粉末チョコレートを得た。
回転釜に直径10mm、一粒あたり重量0.2gの略球状の小麦パフを投入し、24℃、12rpmにて上記粉末チョコレートを回転釜に徐々に投入し、製品一粒あたりの重量が0.45gになるまで小麦パフ表面に粉末チョコレートを被覆した。
得られたチョコレート複合菓子は、チョコレートからなる金平糖様の突起物を有していた。突起物の高さは平均0.7mmであった。
精製セラックGSN(株式会社岐阜セラツク製造所製)10gに酢酸エチル100mLを加え、還流下で30分間撹拌した後室温まで冷却した。1時間静置した後、上清をデカンテーションにて除いた。残った沈殿に、再び酢酸エチル100mLを加え、還流下で30分間撹拌した。室温まで冷却した後1時間静置し、上清をデカンテーションにて除いた。
上記溶液B(1mL)に4vol%エタノール99mLを加え、シェラックAが1mg/mLの濃度となる5vol%エタノール溶液を作成した。この溶液を便宜上溶液Cと称する。溶液Cに単離したアレウリチン酸-5-ジャラール酸エステルを添加し、アレウリチン酸-5-ジャラール酸エステルの含有率が2.00重量%となる溶液、2.25重量%となる溶液、2.50重量%となる溶液、2.75重量%となる溶液、2.75重量%となる溶液、3.00重量%を作成した。なお、ここでいう含有量とは、溶液中の含有量ではなく、シェラック単体に換算した場合のアレウリチン酸-5-ジャラール酸エステルの含有量である。
製造例1で得られたチョコレート複合菓子を別の回転釜に投入し、24℃、12rpmにて溶液濃度25%の苦味低減シェラックのエタノール溶液を投入した。溶媒であるエタノールを揮発させながら、シェラックの塗布率が1.0%となったところでシェラックの投入を終了し、苦味低減シェラック被覆チョコレート複合菓子を得た。
得られた苦味低減シェラック被覆チョコレート複合菓子の表面は全体が苦味低減シェラックで十分被覆されて光沢を有し、チョコレート部分が露出することなくとても良好な状態であった。
該被膜チョコレート複合菓子を指で摘んで保持したところ、チョコが溶けて指に付着することもなく、とても良好であった。
苦味低減シェラックの塗布量が0.5%である以外は製品例1と同様の方法で、苦味低減シェラックの塗布率が0.5%であるシェラック被覆チョコレート複合菓子を得た。
得られた苦味低減シェラック被覆チョコレート複合菓子の表面は光沢は弱いが全体が苦味低減シェラックで十分被覆されており、チョコレート部分が露出することなくとても良好な状態であった。
該被膜チョコレート複合菓子を指で摘んで保持したところ、チョコが溶けて指に付着することもなく、とても良好であった。
苦味低減シェラックの塗布量が0.3%である以外は製品例1と同様の方法で、苦味低減シェラックの塗布率が0.3%であるシェラック被覆チョコレート複合菓子を得た。

投入するシェラックのエタノール溶液が従来品(商品名:精製セラックGSN、株式会社岐阜セラツク製造所製)である以外は製品例4と同じ方法で、シェラックの塗布率が0.1%であるシェラック被覆チョコレート複合菓子を得た。
得られたシェラック被覆チョコレート複合菓子の表面は、凹部に被膜されていない部分があるが、やや良好な状態であった。
該被膜チョコレート複合菓子を指で摘んで保持したところ、チョコが溶けて指に付着することもほとんどなく、やや良好であった。
投入するシェラックのエタノール溶液が従来品(商品名:精製セラックGSN、株式会社岐阜セラツク製造所製)であることとその投入量以外は製品例4と同じ方法で、シェラックの塗布率が0.05%であるシェラック被覆チョコレート複合菓子を得た。
得られたシェラック被覆チョコレート複合菓子の表面は、凸部においてもシェラックの被覆がない部分があり、劣った状態であった。
該被膜チョコレート複合菓子を指で摘んで保持したところ、チョコが溶けて指に付着し、劣ったものだった。
以上の通り、製品例1~7(塗布率0.1~1.0重量%)では、チョコが溶けて指に付着することはなく、摩耗耐性および耐熱保形性が確認された。一方、比較例1(塗布率0.05)では、チョコが溶けて指に付着し、耐熱保形性は確認されなかった。
官能評価
製品例1~7、比較例1で得たシェラック被覆チョコレート複合菓子の官能評価を、1を最低、5を最高として5段階評価を行った。
苦味低減シェラックを用いた製品例1~4の製品が、シェラックの苦味の影響が少なく、概ね評価が高かった。
通常のシェラックを用いた製品例5~7、比較例1の製品は、シェラック塗布率の増加と共に苦味が強く感じられることでチョコレート、パフの風味が抑えられ、評価が下がっていった。
上記実験の結果、製品例1~4(塗布率0.1~1.0重量%)の苦味低減シェラックを用いた場合では、凹凸を有するチョコレートにおいて、摩耗耐性・耐熱保形性および官能評価がいずれも良好であった。
特に、製品例1~3(苦味低減シェラック:塗布率0.3~1.0重量%)では、製品例5および6(精製セラックGSN:塗布率0.3~0.5重量%)と比較しても官能評価スコアが大幅に高かった。このことは、同レベルの塗布率の製品例2(スコア:3.6)と製品例5(スコア:1.9)、製品例3(スコア:4.0)と製品例6(スコア:2.8)の比較により示される。
以上の結果から、苦味低減シェラックが0.3重量%以上で被覆されたチョコレート複合菓子では、高用量のシェラックを用いているにもかかわらず苦味が抑制され、食品の風味を損なうことなくかつ良好なテクスチャー・外観を保持しうることが確認された。
縦78mm、横160mm、高さ7mm、上面凹部深さ3mm、凹部平面に更にロゴマーク形状の溝状凹部(深さ0.3mm)を有する重量58gの板チョコレート(商品名:meijiミルクチョコレート、株式会社明治製)を溶液濃度25%の苦味低減シェラックエタノール溶液を満たした槽に1秒間浸漬し、引き上げ、凹部の余剰シェラック溶液を除去し、20℃の冷風にて十分乾燥し、苦味低減シェラック被覆板チョコレートを得た。
得られた苦味低減シェラック被覆板チョコレートのシェラック塗布率は0.6%であった。苦味低減シェラックは製品全体を均一に被覆しており、指で摘んで保持しても指にチョコレートが付着せず良好な状態であった。
得られた苦味低減シェラック被覆板チョコレートを食したところ、チョコレート本来の風味を有し、良好であった。
使用するシェラックが従来品(商品名:精製シェラックGSN、株式会社岐阜セラツク製造所)である以外は製品例3と同じ方法でシェラック被覆板チョコレートを得た。
得られたシェラック被覆板チョコレートのシェラック塗布率は0.6%であった。
シェラックは製品全体を均一に被覆しており、指で摘んで保持しても指にチョコレートが付着せず良好な状態であった。
得られた苦味低減シェラック被覆板チョコレートを食したところ、製品例8に比べシェラックの苦味が強く、チョコレートの風味が抑えられていた。
砂糖不使用ビスケットボール
ショートニング15重量部、マルチトール15重量部、脱脂粉乳8重量部、小麦粉60重量部、ベーキングパウダー1重量部、香料1重量部をミキサーボウルに投入し、撹拌混合した後、略球状に成形し、オーブンを使用して180℃、10分間焼成し、一粒あたり重量1gの砂糖不使用ビスケットボールを得た。
カカオマス20重量部、全粉乳20重量部、マルチトール40重量部、ココアバター20重量部、レシチン0.8重量部、香料0.1重量部を使用し、チョコレート製造の常法にて砂糖不使用チョコレート生地を得た。
得られたチョコレート生地を回転釜に投入し、24℃、12rpmにて、溶液濃度30%の苦味低減シェラックのエタノール溶液を投入した。溶媒であるエタノールを揮発させながら、シェラックの塗布率が0.2%となったところでシェラックの投入を終了し、苦味低減シェラック被覆チョコレート複合菓子を得た。
得られた苦味低減シェラック被覆チョコレート複合菓子の表面は全体が、苦味低減シェラックで十分被覆されて光沢を有し、チョコレートの部分が露出することなくとても良好な状態であった。
砂糖不使用ビスケットボール
製品例10の製造工程中で得たチョコレート複合菓子を別の回転釜に投入し、24℃、12rpmにて、従来のシェラックのエタノール溶液(商品名:精製セラックGSN、株式会社岐阜セラツク製造所制)を投入した。溶媒であるエタノールを揮発させながら、シェラックの塗布率が0.2%となったところでシェラックの投入を終了し、砂糖不使用シェラック被服チョコレート複合菓子を得た。
また、砂糖不使用シェラック被覆チョコレート複合菓子を指で摘んで保持したところ、チョコレートが溶けて指に付着することもなく、とても良好であった。
しかし、該砂糖不使用シェラック被覆チョコレート複合菓子を食したところ、上記製品例10の砂糖不使用苦味低減シェラック被覆チョコレート複合菓子に比べてシェラック独特の苦味が強く、チョコレートおよびクッキーの風味は劣るものであった。
砂糖不使用ビスケットボール
砂糖40重量部、水分25%の水飴60重量部を混合し、砂糖を撹拌溶解し、下掛け液を得た。
製品例10の製造工程中で得たチョコレート複合菓子を別の回転釜に投入し、24℃、12rpmにて上記下掛け液を投入した。溶媒である水を蒸発乾燥させながら、下掛け液の塗布率が0.1%となったところで下掛け液の投入を終了した。さらに、従来のシェラックのエタノール溶液(商品名:精製セラックGSN、株式会社岐阜セラツク製造所製)を投入した。溶媒であるエタノールを揮発させながら、シェラックの塗布率が0.1%となったところでシェラックの投入を終了し、砂糖を使用したシェラック被覆チョコレート複合菓子を得た。
該砂糖を使用した苦味低減シェラック被覆チョコレート複合菓子を指で摘んで保持したところ、チョコレートが溶けて指に付着することもなく、とても良好であった。また、該苦味低減シェラック被覆チョコレート複合菓子は、シェラック特有の苦味もなく、おいしいものであった。
しかしながら、従来の方法で砂糖を使用した下掛けを行ったため、砂糖不使用とはならなかった。
Claims (14)
- 油性菓子からなるセンターと該センターを被覆するシェラックからなる被覆菓子であって、シェラック塗布率が0.1~10重量%であることを特徴とする被覆菓子。
- 該センターに少なくとも一つの凸部または凹部を有することを特徴とする請求項1に記載の被覆菓子。
- 使用するシェラックが苦味低減シェラックであることを特徴とする請求項1又は2に記載の被覆菓子。
- 前記シェラックが、乾燥重量基準で4.0重量%以下のアレウリチン酸-5-ジャラール酸エステルを含んでなる、請求項1乃至3のいずれか一項に記載の被覆菓子。
- シェラック塗布率が0.3~5重量%であることを特徴とする請求項1乃至4のいずれか一項に記載の被覆菓子。
- シェラック塗布率が0.5~3重量%であることを特徴とする請求項1乃至5のいずれか一項に記載の被覆菓子。
- 凸部の高さまたは凹部の深さが、0.3~5mmである請求項1乃至6のいずれか一項に記載の被覆菓子。
- 前記油性菓子が砂糖または水飴を含まない、請求項1乃至7のいずれか一項に記載の被覆菓子。
- シェラックを被覆する方法がセンターとなる油性菓子をシェラック溶液中に浸漬することであることを特徴とする請求項1乃至8のいずれか一項に記載の被覆菓子。
- 少なくとも一つの凸部または凹部を有する油性菓子を、シェラック塗布率0.1~10%となるようにシェラックで被覆することを含んでなる、被覆菓子の製造方法。
- 前記シェラックが、乾燥重量基準で4.0重量%以下のアレウリチン酸-5-ジャラール酸エステルを含んでなる、請求項10に記載の製造方法。
- 前記被覆が、前記油性菓子をシェラック溶液中に浸漬することにより行われる、請求項10又は11に記載の製造方法。
- 油性菓子における凸部の高さまたは凹部の深さが0.3~5mmである、請求項10乃至12のいずれか一項に記載の製造方法。
- 前記油性菓子が砂糖または水飴を含まない、請求項10乃至13のいずれか一項に記載の製造方法。
