Abstract

On y arrive par le fait que, pendant la totalité de l'opération de transformation et de traitement de la pâte, on maintient une humidité relative élevée de l'air, et le produit de boulangerie chaud, cuit et fini, est soumis à une opération de refroidissement sous vide, en particulier un refroidissement par enthalpie sous vide.
