Abstract

本発明は、食肉肉用獣や食鳥をばらしての滅菌・洗浄された枝肉を含む畜肉を、肉内部の酵素の働きによって温度が上昇するのを防止するため、貯蔵用冷蔵庫に移送する以前に家畜肉の温度をできるだけ氷蔵温度まで下げるテンペリング処理を行う方法において、前記テンペリング処理を行う前に、前記家畜肉に-20~-40°C程度の冷風を流して表面凍結を行い、該表面凍結(皮下組織部分の凍結)により皮下部分に凍結潜熱を生成し、該凍結潜熱の融解時に生じる潜熱により、家畜肉内部の芯温を急速低下させて0~+15°Cの温度でテンペリング処理を行うものである。
