Abstract

 本発明の目的は、糠を含有する原料を使用した食酢における独特のクセのある不快臭を緩和し、飲用、調理用等の広範な用途に利用することができる食酢の製造方法、及び該方法により製造された食酢を提供することである。  本発明は、糠を含有する原料を使用する食酢の製造方法に関し、アンモニアを40~250mg/100ml、より好ましくは100~200mg/100ml、及び糖分を5~50g/100mlとなるように食酢中に含有させることにより、独特のクセのある不快臭が緩和された食酢の製造方法、該方法により製造された食酢及びそれを含有する飲食品を提供する。
