Abstract

 本発明の目的は、糠を含有する原料を使用した食酢における独特のクセのある不快臭を緩和し、飲用、調理用等の広範な用途に利用することができる食酢の製造方法、及び該方法により製造された食酢を提供することである。  本発明は、糠を含有する原料を使用する食酢の製造方法であって、異性化処理を行った糖化液を、糖分が8~50重量/容量%であり、かつ、果糖濃度が3重量/容量%以上となるように、食酢中に含有させることを特徴とする食酢の製造方法、及び該方法によって製造された食酢を提供する。
