Abstract

La présente invention concerne un procédé d'extraction de la pulpe d'agrumes au moyen d'enzyme comprenant les étapes suivantes : le pelage et la segmentation de l'agrume lavé, l'élimination de nervation dudit agrume, son immersion dans la solution d'enzyme et l'agitation pour retirer la pulpe sous l'action d'enzymolyse à un pH compris entre 3 et 10 à une température entre 35 et 60 °C. La solution d'enzyme contient une concentration en masse de 0,05 à 5% de pectinase, de 0,05 à 3% de cellulase et de 0,01 à 2,5% d'hémicellulase, le reste étant de l'eau. Elle présente l'avantage de résoudre les principaux problèmes technologiques des procédés classiques à base d'acide, tels qu'une faible sécurité de production, une faible efficacité de production, une qualité de production instable et la pollution environnementale et analogues, et permet un faible taux de rupture de carpelle, une consommation d'eau réduite et un coût de production réduit dans le procédé de production, et de résoudre le problème de haute teneur en métaux lourds, due à l'utilisation d'alcali industriel dans le traitement classique à base d'acide.
