Abstract
L'invention concerne un procédé de nettoyage d'un appareil de cuisson, en particulier d'un appareil de cuisson à la vapeur, procédé selon lequel, dans au moins une première phase de nettoyage, au moins un premier fluide de nettoyage est dirigé à travers au moins une partie d'un espace intérieur de l'appareil de cuisson, procédé caractérisé en ce que, dans au moins une seconde phase de nettoyage, le premier fluide nettoyage dirigé à travers l'espace intérieur, est amené, au moins partiellement, à au moins un générateur de vapeur de l'appareil de cuisson. L'invention concerne en outre un appareil de cuisson correspondant.
