Abstract
Productos de mayonesa y aderezos, incluidas las composiciones de mayonesa con calorías reducidas y bajo contenido graso y de aderezos para servirse con cuchara o verterse, también con menos calorías y bajo contenido graso, que contienen un sistema preservativo glucono-delta-lactona en una concentración máxima de alrededor del 1% por peso, y, opcionalmente, ácido acético, en una cantidad suficiente como para reducir el pH a cerca de 3,5 o menos. Las composiciones tienen una resistencia superior al deterioro microbiano y, por lo tanto, una duración en almacenamiento más prolongada en comparación con la de los productos que se encuentran a la venta, pero sin el fuerte gusto ácido que estos tienen comúnmente. Por tanto se incluye también una composición según lo descrito que contiene también un agente antimicótico, seleccionado del grupo constituido por: ácido sórbico, ácido benzoito, benzoato sódico, benzoato potásico, y/o sorbato potásico. Se describe también, un proceso para producir los productos descritos.
