Abstract
Изобретение относится к способу производства концентрата мицелл сывороточного протеина, который включает этап (a) доведения рН деминерализованного водного раствора нативного сывороточного протеина до значения между 5,8 и 6,6, в котором концентрация водного раствора сывороточного протеина менее 12 % и в котором, если водный раствор сывороточного протеина содержит дополнительные компоненты, то количество указанных дополнительных компонентов не превышает 10 мас. % от общей массы раствора, (b) обработку водного раствора при температуре между 80 и 89 °C, при этом нагревание осуществляют в диапазоне от 10 секунд до 2 часов, (c) концентрацию дисперсии, полученной на этапе b, и (d) при необходимости, распылительную сушку или сублимационную сушку концентрата мицелл сывороточного протеина. Изобретение относится также к концентрату мицелл сывороточного протеина, полученного указанным образом.
