It is mixed with gelatin, the mixture is soaked for swelling and dissolved in buttermilk at a temperature of 70 ... 72 ° C for 20 ... 25 minutes, pasteurized at a temperature of 80...82 C for 1...2 minutes, then cooled up to a temperature of 3...5 °C, the mixture is combined with other components of the formulation and whipped for 10... 12 minutes, after what it is jellied.
