Abstract
A method for producing milk dessert with elamin provides for preliminary preparation of components, pasteurizing the mixture, cooling, mixing, whipping and jellying thereof in the cooled state. Elamin is used as an additional foaming agent and a mineral enriching agent. It is mixed with gelatin, the mixture is soaked for swelling and dissolved in buttermilk at a temperature of 70 ... 72 ° C for 20 ... 25 minutes, pasteurized at a temperature of 80...82 C for 1...2 minutes, then cooled up to a temperature of 3...5 °C, the mixture is combined with other components of the formulation and whipped for 10... 12 minutes, after what it is jellied.
