Abstract

A method for obtaining a half-finished product for milk cocktails on the basis of buttermilk with the stabilizing agent "Khamulsion" includes preparing a solution of the stabilizing agent, by means of dissolving thereof, mixing and cooling. Preparing the solution of the stabilizing agent "Khamulsion" is carried out in the mixture of buttermilk and its UV-concentrate, mixing thereof preliminary with sugar, at a temperature of 20…25 °C for (25…30)∙60 s. Then it is filtered and pasteurization of the mixture is carried out at a temperature of 72…76 °C for 15…20 s. After that it is cooled up to a temperature of 2…4 °C, prepacked and packed.
