Abstract
Настоящее изобретение относится к формованию шоколада в желаемую форму, а конкретнее к способу формования шоколада в твердом или полутвердом состоянии. Способ формования экструдированного жиросодержащего кондитерского вещества предусматривает подачу жиросодержащего кондитерского вещества в экструдер и приложение давления к жиросодержащему кондитерскому веществу, находящемуся в, по существу, твердом или полутвердом, не выливающемся или не текучем виде, выше по ходу перед сужением потока, при этом температура, давление, относительное сжатие и скорость экструзии таковы, что жиросодержащее кондитерское вещество экструдируется, по существу, изотермически и остается в, по существу, твердом или полутвердом, не выливающемся или не текучем виде и имеет временную гибкость или пластичность. Пока экструдированный продукт проявляет временную гибкость, экструдированный продукт формуют сжатием, прессованием или деформированием в желаемую форму.
