Abstract

Спосіб одержання суцільном‘язового м'ясного виробу передбачає одночасне екструдування тіла виробу з шматочків суцільном‘язового м'яса і зовнішнього шару з жирового матеріалу в гнучку зовнішню оболонку з пластмаси або подібного матеріалу за допомогою екструзійної головки з концентрично розташованими в ній каналами, через кожний з яких подають один з компонентів виробу. З метою одержання виробу з начинкою і збереження цілісності цієї начинки, використовують головку з трьома каналами. Через центральний канал всередину тіла виробу одночасно з вказаними компонентами екструдують начинку виробу, попередньо змішану з жировою основою до одержання густої рідкої маси.
