Abstract

Description
本发明与一种改良食品的制造有关。
本发明具体有关一种一次挤成的食品,其中有整块肉的中心体,一个外层,通常为包围整块肉的脂肪,和用塑料或其他无毒材料制的外衣。整块肉为从(动物)躯体上剔下的肉,基本保留其肌肉组织结构。制造这种食品的方法和设备在我们的专利EPA-0,024,790中已叙述。将整块肉装入一次挤成装置的一个料斗中,脂肪材料装入另一料斗。将整肉块和外脂肪层挤出,外面用料卷上配出的外衣,在挤压头周围围裹。
应理解到整肉块常有相当大的尺寸,所以在挤压通道中挤压并变形时便高度增能。因此,能将这种增能材料有效一次挤成有恒定形状的长块,而外层不破裂是不可想象的。
本发明人等发现与估计相反,假如有一种填芯有适当的结构,可承受挤压,并在增能的肉层中作为连贯的填芯存在,则可能在全部块状肉主层中挤压成截面充分均匀的紧聚填芯。
我们注意了先有技艺领域中的多层挤压食品。这种方法可以FR-A2,274,221号专利作举例。这制品主要作肉食用,其中包括一个圆柱形主体2,外层1和内芯3。这种食品的制造成分质地均匀,或易于使之均匀,如专利EPA-0,024,790号中所称,这类材料一次挤成不成问题。本发明所涉及则是在有粘稠流体外层的高度增能块肉一次挤压方面十分不同而特殊的应用。因此,本发明的特点是一次挤成一个从块肉中通过的填芯,并形成一种材料的该芯,材料中的主填料部分放在通常为脂肪的一种粘稠流体基质中。
在肉类烹调行业中,用“填料”一词表示一种增香物质,通常有碎屑的质地,用面包屑,或类似的谷物,草本或香料作基础。在本发明中,可将填料的主要部分放入通常为脂肪性的乳化基质中。填芯的乳化基质可以和适用于形成食品外脂肪层的乳化配料相似。填料基质很稠,即在食品制造时的低温下有高粘稠性。事实上这乳化配料的典型为有一定程度的自赋形能力,而在挤压过程中变为较有流动性。
对本发明将作举例参照附图说明,附图内容如下:

图3示使用本发明的方法制造的食品。
先参看附图1的一次挤成装置1,其中有带挤压配料的主体或心轴2,和一次成形头3。从图2清晰可见,心轴有中心或轴向通道4,用料斗5通过管5′供给芯料,即填料,一个第一环形通道6,用料斗7通过管7′供给块肉,并有一条外环形通道8,用料斗9通过管9′供给脂肪材料。各料斗有一可调输出的叶片泵。
一次挤成头3的结构可从图2中看出。这实施方案的挤压头可拆卸,用塑料制造,用螺栓10在心轴上作可拆卸安装。
根据欧洲专利EPA0,024,790号,挤压头3的前端部11侧向扩大,增宽供肉的通道6,有相应的通道8的缩小部分,供脂肪乳状料通过。发明的另一特点是填料轴向通道4的挤压头展宽。在图示的实施方案中,填料通道不是挤压头的一部分,而是由轴2的延伸。通道4的展宽和包围通道的管的外表面,有平滑的逐渐扩展的形式;这种构形使块肉在供给心轴中有最大的空间而有最小的障碍。
从图1可见,有无毒的透明片料形成的柔性套管12,螺旋绕在挤压装置1的外面。
使用时,在料斗7中装载块肉,料斗9中装脂肪乳状料,料斗5中装“填料”配料。外衣在挤压头的前方用夹封闭,有三个泵工作,因此图3中的挤出品向前排料。挤成后的接收,输送和冷冻程序,和EPA0,024,790号中叙述的程序相同。于是
挤压继续进行,直到取得要求的长度。然后将挤成品切断,后端夹紧,这夹紧程序同时夹紧下一段外衣的前端。
本发明方法的填料配方主要包括两个组分,即(a)填料主要部分,(b)粘稠乳化状基质。典型配方如下:
肥瘦碎肉约各半 50%
水 34%
主填料 15%
盐 1%
主填料主要为面包屑,加少量草本或香料等的增香剂,香料如洋苏叶,麝香草,和胡椒等。
用诸如绞肉机等的适当器械,将含主填料,碎肉和补充料等的混合料,乳化成有粘稠的流体质地。将碎肉和补充料乳化的技术和设备,在食品加工业中为已知。
有乳化基质的肉和补充料(b),与主填料(a)的相对比例,典型为85%比15%。也可认为脂肪基质80至90%,填料10至20%。
图3示本发明的一种新颖食品,为一段一次挤成品。食品中有块肉作主体A,包围上述填料配方构成的在中心轴向伸展的芯B。肉层A由脂肪圈C包围,然后在外面用外衣D包围。这食品和过去一样,设计中是为了在烹煮时,将其轴线直立。这填料芯可保持其挤压时的形状,在冷冻,化冻,煮熟盛入盘中时,虽然将肉制品切得很薄,填芯不变形。图示填芯B的理想圆剖面。在实际中,块肉和填料的互相动态作用倾向于产生较不规则的形状。
Claims (3)
1、制造块状肉食品的一种方法,包括将内层的块状肉,外脂肪材料层,和塑料之类的柔性外衣一次挤成,其特征在于,将填芯从一个三部一次挤成头的中心区中,穿过块状肉层挤出,并且在于填芯有主填料部分,掺入稠流体配料,向脂肪基质混入。
2、实施权利要求1所述方法所用的设备,其特征在于,三重挤压头中有挤压填料的中心通道,和挤压块状肉通过的第一同心通道,和同时挤压外脂肪层通过的外同心通道,料斗有适当的供料通道。
3、如权利要求2所述的设备,其特征在于,挤压块状肉的中心通道被挤压头展宽。
