Готовый сгусток разрезают и производят постановку зерна в течение 20±5 мин до получения преобладающего размера зерна 8±1 мм. Наблюдается повышенная органолептическая оценка за счет повышения вкусовых качеств, запаха, консистенции, рисунка, так как данная обработка предохраняет поверхность головок сыра от поражения плесневыми грибами, дрожжами и другой нежелательной микрофлоры в процессе созревания.
