Proposed invention provides enrichment the composition by complex of biologically active substances, to stabilize them, to enhance organoleptic, taste and aromatic properties of ready product, to provide their stability and curative-prophylactic spectrum of effect. Description

 The invention relates to alcoholic beverage production, and in particular to a composition of ingredients for balms.

 Known composition of ingredients for balm "Noel", patent of the Russian Federation 2111239, cl. C 12 G 3/06, containing calamus swamp, immortelle sandy, medicinal valerian, elecampane officinalis, St. John's wort pierced, marigold, nettle, yarrow, as well as blackcurrant fruit, rosehip fruit, honey, vanillin, color, sugar and water-alcohol liquid .

The difference of this balm is that it contains fruit drinks from specific raw materials: cranberries, blueberries, lingonberries, i.e. cannot be widely distributed, because there is no industrial harvesting of these berries. The healing properties of the balm are aimed at improving the functioning of the gastrointestinal tract, while its healing properties are not high enough due to the low honey content (up to 50 kg). Physico-chemical indicators are also low. So the total extract is 8.7 g / 100 cm ³ , and the claimed - 11.0 g / 100 cm ³ .

 This composition is also based on fruit and vegetable raw materials, as well as the use of honey.

 Common characteristics of the compositions are that they contain marsh calf, common oregano, St. John's wort, marigold, peppermint, motherwort, yarrow, as well as dogrose, strawberries, aronia, honey, vanillin, color and sugar.

The disadvantages of this analogue:
- the composition contains a large amount of propolis and strawberries, which causes allergies in some people;
- the content of clover grass in combination with cornflower grass increases the narcotic effect of clover;
- non-raw materials are used (bluehead grass and prickly tatar grass), as a result of which there is no commercial preparation of them, and this increases the cost of the product;
- with a large number of ingredients, the pharmacological properties are low, because herbs are used that do not give a balm of pronounced medicinal properties that affect both the improvement of the gastrointestinal tract and the cardiovascular and vegetovascular systems;
- alcoholized juices of strawberries and aronia are used, which impairs the organoleptic properties of the product;
- Applies expensive imported raw materials - cinnamon, which also increases the cost of the product and limits the possibility of expanding the production of this balm.

 The closest in technical essence is the composition of the ingredients for the balsam "Chaklun", RF patent 2031107, class. C 12 G 3/06.

 The composition contains calamus marsh, immortelle sandy, elecampane officinalis, common oregano, pierced St. John's wort, nettle, peppermint, plantain, motherwort, yarrow, rosehip and aronia, sugar and water-alcohol liquid.

 This composition has good medicinal properties due to the successful combination of a set of medicinal herbs, fruits and berries, however, medicinal properties are aimed at regulating metabolism and increasing immunity.

 The objective of the proposed solution is to expand the range of balms for medical and preventive purposes, namely for the prevention of cardiovascular diseases, atherosclerosis and hypertension, while improving the organoleptic properties of the product.

This is achieved by the fact that the composition containing calamus marsh, immortelle sandy, elecampane officinalis, common oregano, St. John's wort, nettle, peppermint, plantain, motherwort, yarrow, rosehip, aronia, sugar and aqueous-alcoholic liquid additionally contains medicinal valerian , calendula, lemon balm, licorice, hawthorn, strawberries, blackcurrant, garlic, vanillin, natural honey and color in the following ratio of ingredients kg per 1000 gave the finished product:

A study of the special and patent literature, as well as the assortment of balsams produced, shows that for the first time a composition of ingredients for balsam was obtained at their indicated ratio, which made it possible to obtain a product with high pharmacological parameters, the main therapeutic properties of which are aimed at the prevention and treatment of cardiovascular diseases, atherosclerosis and hypertension .

 In combination with the well-known ingredients, the proposed composition has other medicinal properties: it has a beneficial effect on the metabolic process, improves the functioning of the gastrointestinal tract, is a tonic and tonic drink, quickly removes alcohol intoxication and has good organoleptic characteristics.

 Introduction to the composition of additional medicinal valerian, calendula, lemon balm, licorice, hawthorn fruit, strawberries, garlic and natural honey in combination with other well-known ingredients: marsh sup, elecampane officinalis, nettle, peppermint, motherwort, rose hips, provide cardio prophylaxis -vascular diseases, as It is known that they are widely used in drug collections in this area and in the manufacture of drugs in pharmacology.

 So, for example, hawthorn fruits contain more than 15 types of flavonoids (up to 50%), phenolcarboxylic acids, sorbitol, choline, and karatenoids. (The chemical composition, indications of the use of the introduced components are widely known from any reference literature on medicinal plants and phytology, which is why the information in this application is not given).

 The introduction in the composite of lemon balm, licorice rhizomes, hawthorn berries, blackcurrant berries, aronia and garlic in combination with well-known components such as sandy immortelle, common oregano, plantain, motherwort, rose hips, is aimed at the prevention and treatment of hypertension and atherosclerosis.

 The introduction of natural honey enriches the balm with biologically active substances. It is known that in the content of the most important elements: potassium, magnesium, zinc, copper, cobalt, molybdenum and others, honey significantly exceeds the mineral composition of the most commonly used fruits and vegetables (grapes, tomatoes, apples, apricots and even black currants).

 Honey gives the balm antioxidant and hypatoprotective (liver protection) properties, increases the body's defenses.

 In combination with the above components, honey gives the product special value as a unique means of preventing cardiovascular diseases.

 In addition, honey improves the organoleptic characteristics of the balm: improves aroma and taste.

Process description
The balm is prepared by blending from rectified ethyl alcohol of the highest purification and water with the addition of infusion of plant materials, fruit drinks of hawthorn, strawberries, rose hips, aronia, blackberry and blackcurrant fruit drinks, infusion of garlic, vanillin, honey, color and sugar.

 For the production of 1000 dal balm, raw materials are used according to the declared amount.

 The infusion of plant materials is obtained by the method of double infusion with daily single mixing in accordance with table 1 of Appendix A or in an extraction unit with periodic repeated mixing.

 Fruit drinks of strawberry, rose hip, chokeberry and blackcurrant fruit drinks are prepared in accordance with table 3 of Appendix 1U of the Collection "Recipes for alcoholic beverages and vodka" R 10-12399-99.

 Hawthorn fruit juice is prepared in accordance with table 2 of Appendix A.

 The infusion of garlic is prepared in accordance with table 3 of Appendix A.

 Blending is carried out in blending tanks - enameled or stainless steel, equipped with a mechanical stirrer.

 Firstly, fruit drinks of hawthorn, strawberry, rosehip, aronia, blackberry and blackcurrant fruit drinks, infusion of plant materials, infusion of garlic, part of water (1/3), then rectified spirit, water (1/3), and sugar syrup are added to the bath tub. 85.8%, honey (dissolved in warm water), vanillin, previously dissolved in rectified alcohol in a ratio of 1:10, color and water (last 1/3) of the day the final blending is brought to a predetermined volume.

 Mixing of the blend is carried out periodically after making each component for 3-5 minutes, and after blending for 15-20 minutes.

 After blending, an average sample is taken for analysis. If the prepared blend does not correspond to the recipe according to any of the indicators, it is corrected by introducing the required components.

 After re-mixing, the blend is again analyzed.

 Ready balsam blend is kept in a blend tub for 2-3 days, filtered and sent for bottling. The average filtration rate of the balm is 35-45 dal / h.

The following are examples of implementing the solution:

Physico-chemical indicators in both versions:
strength - 35%, total extract - 11.0 g / 100 cm ³ .

Organoleptic indicators are as follows:
Example 1: color is dark brown;
Taste - tart with bitterness;
Aroma - original, without highlighting the aroma of the individual ingredients.

Example 2: the color is dark brown;
Taste - tart with a slight bitterness;
Aroma - complex, harmonious, without highlighting the aroma of the individual ingredients.

 Experiments with ingredients that go beyond the limit values showed that the organoleptic characteristics are slightly, but vary.

 At indicators below the minimum, the color is light brown, the taste is empty, liquidish. In general, the balm is not harmonious.

 At values exceeding the maximum, the color is dark brown, the taste is more astringent, with a greater bitterness, the aroma is sharper, i.e. balm is also not harmonious.

 A new balm, such as Minella, has a wider range of medicinal properties, mainly of the cardiovascular and vegetovascular directions.

 When compiling the recipe, the scientific and practical experience of using medicinal plants in traditional medicine and centuries-old folk experience were studied. Moreover, taking into account the task in view, plants with targeted properties in the amount of 60-70% of the total volume are introduced into the composition.

 These ingredients in the composition mutually complement and enhance each other's action, namely tannins, flavonoids, essential oils, cartoids, complex organic acids (St. John's wort, calendula, hawthorn, currant, elecampane, etc.) prevent the breakdown of unstable valepotriates, vitamin C (valerian , plantain) and stimulate the desired fermentation changes, for example, hydrolytic decomposition of glycosides, as well as the formation of aromatic substances.

 As a result of the processes of mass transfer and assimilation, the complex of biologically active substances is stabilized, the taste of bitterness is softened, and a balm with original aromatic and taste characteristics is obtained.

 Each of the ingredients enriches the composition with a complex of biologically active substances, and in general, this composition increases the organoleptic, taste, aromatic properties of the finished product, ensuring its durability and therapeutic and preventive spectrum of exposure.

 Only this combination of ingredients, the optimal amount of which is selected experimentally, provides a balm with a preventive effect against cardiovascular diseases.

 Thus, the proposed composition of the ingredients of the balm exhibits a synergistic effect, and the claimed invention meets the criterion of "inventive step".

 The composition is composed of fruit and vegetable raw materials, growing mainly throughout the country, which allows us to expand the production of this unique preventive balm.
