1. Способ консервирования молока и молочных продуктов путем введения в консервируемый продукт консервирующего агента, отличающийся тем, что в качестве консервирующего агента используют бетулинсодержащий экстракт бересты, содержащий в качестве основных компонентов бетулин, лупеол и кофеат бетулина при содержании последнего не менее 5 мас.%. ! 2. Способ по п.1, отличающийся тем, что используют бетулинсодержащий экстракт бересты следующего состава, мас.%: ! Бетулин 65-71 Лупеол 12-16 3-O-кофеат бетулина 5-15 Сопутствующие вещества остальное до 100% ! 3. Способ по п.1 или 2, отличающийся тем, что в молоко и молочные продукты нормальной и повышенной жирности консервирующий агент - бетулинсодержащий экстракт бересты вводят в количестве от 0,08×10-3 до 0,79×10-3 г на 1 г жировой составляющей молочного продукта, а в обезжиренные молочные продукты и молоко - в количестве от 0,8 мг до 1 г на 1 кг продукта. 1.
