Abstract
Procedeu pentru obtinerea unui sirop concentrat de fructoza prin tratarea zaharozei, pentru obtinerea unui produs intermediar continînd dextroza fructoza si polizaharide dupa care produsul intermediar se supune actiunii unei enzime izomeraza pentru a izomeriza dextroza în fructoza si hidrolizarea polizaharidelor în absenta enzimei izomeraza caracterizat prin aceea ca solutia de zaharoza suprasaturata avand în compozitie 10% zaharoasa se supune izomerizarii prin actiune enzimatica cu fructozil-transferaza la temperatura de 25....60 degree C si la pH=4,5.....6,5 obtinînd un produs intermediar care contine 20....60% dextroza si fructoza si 70.....40% polizaharide continînd cel putin 66% în greutate radicali fructozili legati beta-(2,1), eventual izomerizînd dextroza la fructoza apoi hidrolizînd polizaharida în absenta enzimei izomeraza pentru a obtine un produs care sa contina fructoza.
