Abstract

Oppfinnelsen vedrører en fremgangsmåte for koking av en stivelsesholdig sammensetning innbefattende: (a) et første trinn innbefattende blanding av minst et stivelsespulver med et vandig stivelsesfluid, hvor forholdet mellom stivelsespulver og vandig stivelsesfluid er slik at det totale stivelsesinnholdet til det erholdte blandingen er større enn 45 masse-%, og hvor det første trinnet blir utført i et kokekammer som holdes ved en temperatur som i det minste er lik den høyeste gelatiniseringstemperaturen (GT) til alle stivelsene som er tilstede i blandingen, for en tidsperiode som er tilstrekkelig til å erholde en kolloidal stivelsesløsning, og (b) et andre trinn innbefattende oppvarming av den kolloidale løsningen av stivelse erholdt i trinn (a), ved et trykk som er større enn atmosfærisk trykk og ved en temperatur mellom 120 °C og 180 °C.
