Abstract
La presente invencion describe metodos para la preparacion de composiciones de sustrato, tuberculo y grano que contienen isomalto-oligosacaridos. Los metodos comprenden: (a) poner en contacto un sustrato, tuberculo o grano que contiene almidon no gelatinizado con una enzima maltogenica y una enzima de licuefaccion del almidon para producir maltosa: (b) poner en contacto la maltosa con una enzima transglucosidica, en donde las etapas (a) y la etapa (b) se presentan a una temperatura menor que o a la temperatura de gelatinizacion del almidon; y (c) obtener una composicion de sustrato, grano o tuberculo que tiene un isomalto-oligosacarido producido enzimaticamente, en donde el oligosacarido se deriva del grano. La enzima maltogenica puede ser ya sea exogena o endogena al grano. Las etapas de poner en contacto pueden ser secuenciales o simultaneas. La presente invencion tambien describe una harina, soluciones de rehidratacion orales, aditivos de cerveza, alimento, alimentos, aditivos de bebidas que incorporan las composiciones de grano fabricadas como se describe.
