Abstract
Bei einem Verfahren zum Aufschluss von Stärke (native Stärke oder bearbeitete Stärke, wie kationische Stärke) wird eine wässerige Aufschlämmung der Stärke in einem Kochbehälter (4) mit Wasserdampf behandelt und dabei Scherkräften ausgesetzt, wobei die Stärke enthaltende Aufschlämmung im Kochbehälter (4) durch das Einleiten von Wasserdampf auf eine Temperatur zwischen 85°C und 110°C erwärmt wird und der Aufschlussschritt solange ausgeführt wird, bis der gewünschte Aufschlussgrad erreicht worden ist. Beim Abbauen nativer Stärke kann das Abbauen unter Zusatz eines Enzyms, beispielsweise einer Amylase, ausgeführt werden. Beschrieben wird auch ein Kochbehälter (4), welcher beim Durchführen des Verfahrens zum Aufschluss von Stärke verwendet werden kann.
